White Pizza with Potato

 


Ingredients:

White sauce:
1. 100g philadelphia cream cheese
2. 100g sour cream (creme fraiche)
3. 1 egg yolk (optional)
4. Salt & pepper to taste

Toppings:
1. 1 onion sliced thinly
2. 1 potato sliced thinly
3. 2 button mushrooms sliced thinly
4. 250g grated mozzarella cheese (optional)
5. A dash of dried rosemary

Others:
1. 2 TBS Olive oil
2. 1 Pizza dough

Directions:

1. For best results, toss potato slices in 1 tablespoon of olive oil and bake in oven for 10 minutes at 200 degree Celsius.

2. On the pizza dough, spread the white sauce mixture.

3. Top with button mushroom, onion, mozzarella cheese (optional), potato and sprinkling of dried rosemary.

4. Bake for 10 minutes in the oven at 250 degree Celsius or until the cheese has melted. Watch and adjust according.

5. Sprinkle a little bit of olive oil and salt on top and serve :-)

Additional Information:

Little FECS got tired of pizza with tomato sauce. In Denmark white pizza with potatoes are very popular - a Danish invention. We tried this and the kids love it. I am recording down the recipe for future reference. You can also use 200g of mascarpone cream cheese instead of philadelphia cream cheese and sour cream.

Braised Beef with Oats & Flax Seeds


Ingredients:
1. 1/4 cup rolled oats ground
2. 1/4 cup flax seeds ground (Hørfrø)
3. 4 pieces of Osso Bucco beef shanks cut into chunks
4. 4 TBS dark soy sauce
5. 2 cups homemade tomato soup or 1/4 cup store-bought tomato sauce
6. 1/2 cup frozen green peas
7. 1/2 cup frozen sweet corns
8. A handful of mushrooms
9. 2 cloves garlic minced
10. Salt & pepper to taste
11. 2 TBS cooking oil
12. 1 cup boiling water

Directions:
1. Grind rolled oats and flax seeds separately in a blender or food processor into flour and set aside.
2. On a plate, add 1/4 cup of oats flour, 1/4 cup of flax seeds flour, 1 tsp salt and a sprinkle of pepper and mix well.
3. Lightly coat meat (without the bone marrow) with the flour mixture.
4. Heat pan with cooking oil on high heat, add meat and lightly fry until golden (may have to reduce the heat a little so that it would not be burnt).
5. Transfer the meat to a pot, add the bone marrow and add one cup of boiling water.
6. Cover with lid and simmer the beef shanks.
7. After one hour or so, you will notice a thick layer of fat that is floating on top. Skim it off and discard.
8. Add tomato soup/sauce, dark soy sauce, frozen peas and corns, mix well and simmer for another hour until meat is tender.
9. Serve with rice :-)

Additional Information:
Traditionally, corn starch is used to coat the meat for frying to tenderize the meat. I am using oats and flax seeds instead because it is healthier and much more nutritious, but also flavorful. I find that using a mixture of oats and flax seeds give the best effect, as these two ingredients complement each other. Flax seeds have a low smoke point, and thus it is not suited for frying directly. Mixing it with oat flour helps to blend it into the flour and at the same time, bringing out its flavor. 

The oat flour also helps to thicken the liquid for simmering into a nice sauce, but be careful not to overcoat the meat with too much ground oats, as it will make the sauce too thick.

On a plate, lightly coat beef shanks with ground oats and ground flax seeds

Heat pan with cooking oil on high heat, add coated meat and fry until golden (may have to reduce heat a little so that it would not be burnt).

Transfer to a pot

Add boiling water to keep the temperature hot

Add back the bone marrows

Cover with lid and simmer the beef for 2 hours...

after one hour...

skim off the layer of fat floating on top and discard it.

Add homemade tomato soup (or store-bought tomato sauce), dark soy sauce, mushrooms, frozen peas and corns, mix well and simmer until tender.

Serve with rice :-)

Oven-Baked Portobello Mushrooms with Cheese


Ingredients:
1. 5 large portobello mushrooms
2. A few slices of cheese to fill the portobello mushrooms
3. 1 TBS olive oil
4. Salt & pepper to taste
5. A bit of parsley for garnish

Directions:
1. Pre-heat oven to 220 degree celsius
2. Coat portobello mushrooms with a bowl of olive oil and salt with a brush.
3. Fill the cavity with cheese.
4. Bake in oven for 10 mins until the cheese is melted and golden.
5. Garnish with fresh herbs and serve :-)

Additional Information:
The portobello mushrooms can be filled with more elaborate fillings, but this is a quick and fast way of making them that tastes equally delicious.



We have eaten one, before we remembered to take a picture of the finished product.

Quick Oven-Roasted Beef with Jerusalem artichokes

Quick Recipe

Beef, Jerusalem artichokes, stalk cheery tomatoes, oyster mushrooms, onion, cashew nuts, black & white sesame seeds and fresh thyme drizzle with olive oil, salt and pepper. Roast in pre-warmed oven at 220 degree celsius for 15 mins.

Detailed Recipe

Serves 4

Ingredients:
1. 4 pieces of beef steaks approx. 180g each cut into halves each
2. 3 Jerusalem artichokes washed, peeled and sliced
3. 10 stalk cherry tomatoes
4. A desired handful of oyster mushrooms sliced (I took a big handful because I love oyster mushrooms)
5. 1 onion quartered
6. 2 cloves garlic pressed
7. A handful of cashew nuts (Mr. FECS' favorite ingredient)
8. 1 tsp black or white sesame seeds (optional)
9. A few stigs of fresh thyme
10. 1-2 TBS olive oil
11. Salt & pepper to taste

Directions:
1. Place all ingredients in an oven-proof dish.
2. Drizzle with olive oil, salt and pepper.
3. Roast in a 220 degree celsius pre-warmed oven for 15 mins and serve with roasted potatoes :-)

Additional Information:
I usually prepare the ingredients the night before and leave them in the fridge, as in the chaos of day means that I usually don't get dinner out in time.

Baby Food of the Day: Mushroom Soup for the first time (7M3D)


18 December 2016 (7M3D): This was the first time BAby FECS ate mushrooms. I served it once - in small bite size, but she couldn't really gum it. Today, I made this with oyster mushrooms using the Philips soup-maker, making it all blended, and Baby FECS liked it.




She finished everything that was given to her.


Updates:
19 December 2016 (7M4D): When I told her that we are having mushroom soup. She couldn't wait for the first spoon. She really loves the mushroom soup, one of those few times, when I felt energized after feeding her :-)

Pizza with Sliced Beef, Spinach, Mushroom & Cheese


Homemade pizza with sliced beef steak, baby spinach, button mushrooms and grilled cheese...

Daddy FECS and Little FECS loved it. It tasted really good. We were not so fond of the grilled cheese. Next time, we will make it with mozzarella cheese.

We basically sliced the beef steak and put on the pizza. We did not have to fry it on the pan. The pizza then went into the oven at 180 degree celsius for 15 minutes and the beef was all cooked and yet still tender :-)

Japanese Ramen Noodle Soup 日本拉麺

Adapted from Just One Cookbook
Serves 2

Ingredients:
1. 2 portions of ramen
2. 150g pork belly sliced in strips
3. 1 inch ginger grated
4. 2 cloves of garlic minced
5. 2 shiitake mushrooms sliced thinly
6. 2 king oyster mushrooms sliced thinly
7. 50g or 1 bunch of enoki mushrooms loosened
8. 50g or a handful of bean sprouts (optional)
9. 2 leaves of xiao bai cai (optional)
10. 2 tiger prawns
11. 2 eggs (荷包蛋 he bao dan)
12. 1 TBS sasame oil.
13. 1 TBS spicy chili bean paste (la doubanjiang)
14. 1 TBS sake (optional)
15. 1 TBS Mentsuyu
16. 1 TBS Japanese rice vinegar
17. 1 tsp. miso paste
18. 1 tsp. soya sauce
19. 1 litre of water or homemade stock
20. 1 stalk spring onions chopped for garnish (optional)
21. A handful of Katsuobushi (dried bonito flakes) (optional)
22. 1 tsp. Chiu Chow Chilli oil (optional)

Directions:
1. Meanwhile, fry eggs, drain away excess oil and set aside.
2. Heat wok with sesame oil over medium high heat, add garlic and ginger and fry until golden.
3. Add spicy chili bean paste (la doubanjiang), stir and mix well.
4. Add the meat and fry until cooked.
5. Add the shiitake, king oyster mushrooms and enoki mushrooms and fry until cooked.
6. Add sake, Mentsuyu and water and bring to a boil for a few minutes until the alcohol evaporates.
7. Add 1 litre water/stock. It will sizzle. for a few minutes until the alcohol evaporates.
8. Add add miso paste, soy sauce and Japanese rice vinegar.
9. Add tiger prawns, remove from broth when it is cooked (it turns red) and set aside.
10. Add bean sprouts and xiao bai cai, cook for 30 seconds, remove from broth and set aside.
11. Concurrently, boil a separate pot of water and cook noodles according to package instructions, drain and portion into 2 large bowls.
12. Add toppings i.e. 1 prawn, 1 egg, mushrooms and vegetables (beansprouts and xiaobaicai) into each bowl.
13. Pour in the hot broth into the bowls.
14. Garnish with spring onions and bonito flakes and serve hot :-)
15. If you like it extra spicy, add chilli oil into your noodle soup

Additional Information:
Actually Ramen is a Chinese dish introduced by the Chinese immigrants in Japan. It means 拉麺 (la mian) in Chinese. It is also called 大碗面 (big bowl noodle) in Chinese. But it has become known to be a Japanese dish known as Japanese Ramen. We tried this for the first time today. It's wonderful to have a bowl of hot Ramen noodle soup during the cold and wet autumn.

I reduce the meat from 250g to 150g, because I think it is too much meat. I added more vegetables to the noodle soup, because I love vegetables and it is healthier. I also increase the water/stock, because I love soup.

Main ingredients

Seasonings

You can buy pork belly from Netto for 69 DKK for 1.2 kg.

Prepare the eggs. I like mine done like 荷包蛋 Chinese Pocket Egg.

Heat wok with sesame oil over medium high heat

Add garlic.

 Add ginger and fry until golden.

Add spicy chili bean paste (la doubanjiang).

Stir and mix well.

Add the meat.

Fry until cooked.

Add the shiitake mushrooms.

Add the king oyster mushrooms.

Break loose, add the enoki mushrooms and fry until cooked (very fast).

5. Add 1 TBS sake (optional, I didn't add it here) and 1 TBS Mentsuyu.

Add 1 litre of water. It will sizzle.
  
or add homemade stock. Since I have some left-over stock today, I use a mixture of water and stock. Don't worry, if you don't have stock. As the bean paste is very savory, this dish will still taste good, even if it is not made from stock.

Bring to a boil for a few minutes until the alcohol evaporates.

Add 1 tsp. soy sauce.

Add 1 tsp. miso paste.

Add 1 TBS Japanese rice vinegar and simmer for 10 minutes under low heat.

Add tiger prawns, remove from soup when it is cooked (it turns red) and set aside. 

Add bean sprouts.

Add xiao bai cai, cook for 30 seconds or until just done, quickly remove from soup and set aside. Don't overcook the vegetables.
You can add in the noodles at this time into the soup, especially if you are using fresh noodles, and cook for 1 minutes or until the noodles are done. 

OR

You can while making the soup, boil a separate pot of water concurrently for the noodles. If I have the time, I prefer to cook the noodles separately to remove any wax or preservatives that come with packet noodles.

When water boils, cook noodles.

Once noodles is cooked, drain and divide portions into two serving bowls.

Add toppings of egg, prawns and vegetables.

Pour in the hot soup and garnish with spring onions and bonito flakes. Serve hot :-)

If you like it extra spicy, add 1-2 tsp of chilli oil into your soup.
