Banana Blueberry Oat Buns

Ingredients:
1. 10 large ripe bananas mashed
2. 50g frozen or fresh blueberries (optional, you can leave them out if you run out of supplies. It won't affect the taste.)
3. 100g rolled-oats
4. 150g white wholewheat flour (or plain flour if you don't like wholewheat flour)
5. 2 TBS olive oil (optional)
6. 2 tsp baking powder
7. 2 eggs
8. tsp brewer's yeast (optional, added for more nutrition value)
9. 50g raisins (optional)
10. 50g walnuts chopped as desired (optional)

Directions:
1. Pre-heat oven to 200 °C (390°F).

2. In a mixing bowl, add the bananas and mash them with a fork.

3. Add all other ingredients and mix well.

4. On a baking tray lay with baking paper, form into desired shapes, e.g. fish with a spoon if you are baking buns or in a bread loaf pan laid with baking paper.

5. Bake in the oven for 12-15 minutes for buns or double the time (30-45 mins) if you are baking a loaf of bread.

Tips:
1. As you eat them, you can tell the story of Jesus feeding five thousands with five loaves and two fish (from John 6:1-14 and Matthew 14:13-21) or Noah's Ark, depending on what animals you shaped.

Additional Information:
It's J's 5 year old birthday today. I baked it this morning for him to bring to his kindergarten and share. I am going to bake it again for his birthday party this Friday.

This is very healthy - no sugar, no butter, but they still taste super sweet because the bananas is a natural sweetener and they are full of goodness from the oats, carrot, nuts and brewer's yeast.

Rolled-ats and blueberries not shown.

Quick & Easy Raw Oats Breakfast

Ingredients:
1. 1/4 cup rolled oats
2. 1/2 cup fresh skimmed milk
3. A handful of goji berries, pumpkin seeds, raisins, wheat germ and chia seeds

Directions:
In a bowl, add rolled oats, add milk and topped with a handful of goji berries, pumpkin seeds, raisins, wheat germ and chia seeds.

Additional Information:
The Danes eat raw oats with fresh milk. Sometimes, when our children are tired of eating oatmeal, I will serve them this raw oats breakfast, and they like it. This is also very easy to prepare, when we are in a rush in the morning. Daddy FECS loves it too. For our Little FECS, I also add in brewer's yeast for added nutrition, although I don't do that for the rest of the family, as they don't like the taste of brewer's yeast.

2. 1 tsp cinnamon powder (optional)

3. 2 full cups (200g) rolled oats

4. 1/2 cup raisins

5. 1/2 cup chopped walnuts (optional)

6. 1/4 cup olive oil

Directions:

1. Preheat oven to 130°C / 270°F.

2. Mash the bananas well with a fork or a food processor.

3. Mix well all the ingredients into a large bowl.

4. Press and squeeze tight and form into bite size cookies and flatten.

5. Bake for 30 mins or until golden.

6. Cool and serve.

Additional Information:

I have some over-ripe bananas and decided to make them into banana & oats cookies. It can keep in an air-tight container for 4 days. I divided the dough into two and added 1 tablespoon of honey to the other half. The half without honey tasted sweet enough for me and Baby FECS. She ate a lot of it. So actually I don't need to add honey to sweeten it.

Raspberry Snack

This is J's idea of making raspberries as a snack by stuffing them each with almond or raisin. He was showing it to me, when we had our yogurt ice-cream at Yummy Yogurt and he was eating his lunch box.

I incorporated it into his lunch box... but the rest of his lunch box is starting to look mediocre... I am running out of steam...

The Danes call it "abemad" meaning "monkey food." J's school sometimes serves this as snack for the children. He loves it and requested that I made it. Today, he made it for me, and he was so proud that he taught mommy how to make it. But actually I googled for the recipe, and helped him :-) This is a healthier version, with Greek yogurt instead of heavy cream. We made it for his play date with M today :-)
