Quick & Easy Raw Oats Breakfast

Ingredients:
1. 1/4 cup rolled oats
2. 1/2 cup fresh skimmed milk
3. A handful of goji berries, pumpkin seeds, raisins, wheat germ and chia seeds

Directions:
In a bowl, add rolled oats, add milk and topped with a handful of goji berries, pumpkin seeds, raisins, wheat germ and chia seeds.

Additional Information:
The Danes eat raw oats with fresh milk. Sometimes, when our children are tired of eating oatmeal, I will serve them this raw oats breakfast, and they like it. This is also very easy to prepare, when we are in a rush in the morning. Daddy FECS loves it too. For our Little FECS, I also add in brewer's yeast for added nutrition, although I don't do that for the rest of the family, as they don't like the taste of brewer's yeast.

No-Baked Oatmeal Dough Rolls

Makes 24 balls

Ingredients:

1. 3 large banana mashed with fork (Make sure it is ripe, so they will be very sweet) If your bananas are not ripe and sweet enough, you can add maple syrup to sweeten it.
2. 1 cup ground oats
3. 1/2 cup sunflower seeds (50g)
4. 1/2 cup pumpkin seeds (72g)
5. 1 TBS chia seeds
6. 2 TBS brewer's yeast
7. 7 TBS wheat germ (100g)
8. A handful of goji berries
9. 1/2 cup ground oats for coating
10. 8 blueberries (optional for decoration)
11. 8 raspberries (optional for decoration)
12. 2 strawberries cut into 8 slices (optional for decoration)

Directions:

1. Grind oats in a blender.
2. Mash bananas with fork
3. Mix all ingredients into a dough.
4. Form into balls and coat with ground oats.
5. Serve with a glass of milk :-)

Additional Information:

J loves to eat raw dough. This morning, I got an idea and concocted this "dough" coated with ground oats.

This is his usual breakfast, but prepared in a slightly different way to give variety of texture. Surprisingly, Daddy FECS tried it and liked it too - a bonus to encourage the family to eat oats :-)

If you want to make it look prettier, you can top it up with some berries for decoration :-)

If you feel that it tastes a tiny-winch bitter, it is due to the brewer's yeast, which is very nutritious. You can reduce the brewer's yeast or omit it completely, or you can mask it with honey, chocolate sauce, etc.

If you want it sweeter, you can coat it with chocolate powder, honey and chopped nuts; and drizzle with some chocolate sauce :-)

This recipe is concocted based on recommended daily intake. If you can eat all 3 plates during the day along with 4 cups milk and 1 orange, you would have covered all the recommended daily intake for vitamin B4, vitamin B6, vitamin E, vitamin B4, vitamin B1, molybdenum, manganese and magnesium as well as vitamin D, calcium, iodine, vitamin B2, vitamin B12 and vitamin C :-)

Grind 1 cup oats and grind another 1/2 cup for coating (I like using my baby blender, because it is much more convenient)

Peel 3 bananas

Mash the 3 bananas with fork

Add 2 TBS of brewer's yeast

Add 3 TBS of wheat germs

Add 1/2 cup of sunflower seeds

Add 1/2 cup of pumpkin seeds

Add a handful of goji berries

Add 1 TBS chia seeds

Add 1 cup of ground oats

Combine into dough

Coat with ground oats

Ready to serve:-)

Or you can decorate them  further with berries  to make them look prettier :-)

Additional Information:

I love soup. It is autumn in Denmark, and I can't live without hearty hot soup. It keeps me warm and in good mood :-) I normally prepare the soup in the morning and have it during the rest of the day. Come dinner time, there will be a soup ready to go with dinner too :-)

Besides carrots and potatoes, you can also use any other root vegetables. Although this is a vegetable soup, pork or chicken is used to make the stock.

You can discard the pork bone that is used to make the stock, or you can eat the meat. The meat is actually quite tasty.

This is actually rather similar to the Japanese tongjiru soup. I love the way Just One Cookbook present their soup recipes. Check it out, which I am going to try one day, but I could not find all the ingredients in Denmark:

Here are the main ingredients:

Bring to boil 1.5 litres of water on high heat. When water boils, add pork rib bones or chicken thighs and turn down heat to low (no. 2.5 on my stove)

Simmer on low heat for 30 minutes until the meat is cooked.

Add Qing Gong herb and continue to simmer. (Adding this herb gives the soup a nice aroma, but you can also do without)

Heat 1 TBS canola oil.

Fry garlic until golden.

Add carrots and fry until golden.

Add potatoes.

Coat and mix well.

Add shitake mushrooms and fry for a minute until cooked.

Add enoki mushrooms.

Add 1 TBS mirin, bring down heat to medium (as mirin tends to burn the food and give it that BBQ taste, but you don't want to over-burn the food) and stir for a couple of minutes to cook down the alcohol.

Add 1 TBS soya sauce and stir.

Add 1 ladle of the stock.

And let it sizzle and boil a little.

Transfer into the pot of soup.

You can drink the soup now, if you do not wish to add any other vegetables.

Add Chinese cabbage.

Add another other vegetable, here it is another Chinese vegetable called Xiao Bai Cai.

Simmer and ready to drink.

At the end, you can add the goji berries. Goji berries give the soup a tinge of sweetness and it is known to be nourishing for the eye-sight by the Chinese.

Now it's done.

Scoop into a bowl, garnish with spring onions and enjoy :-)

Avocado Oatmeal Milkshake

Makes 2 glasses

Ingredients:
1. 1 ripe avocado
2. 2 TBS raw oats (optional) (Danish: havregryn)
3. 1 cup skimmed milk (250ml) (Danish: Skummetmælk)
4. 1 tsp honey (or 1/2 a pear as sweetener)

Directions:
1. Add all the ingredients together, fill the cup up with milk and blend well.
2. Serve

Tips:
1. You can add a handful of goji berries or nuts.

Additional Information:
This is currently J's favorite smoothie - he requested for it a few times a week, especially during our try-to-be weekly Sunday Family Meeting Night. Actually he concorted it. He suggested to add oatmeal. I tasted it, and it tasted surprisingly delicious. Oatmeal and avocado go well together. J likes it with goji berries. I prefer it without. You do not have to add oats, it is just an extra.

For convenience, efficiency and ease of washing up, I use mini baby blender, that can be purchased from Korea, Japan or Singapore. But you can use any blender you have, of course.

Get ready all ingredients and blender

Here are the main ingredients

Add 1 avocado...

2 TBS oats

1 tsp honey or as desired

Fill up the cup with milk
Blend in mini baby blender for a few seconds
It's done - look how creamy it is :-), and it is cream of the healthy type :-)

Pour into 2 glasses
Ready to serve :-)
