Ingredients:
1. 1 pasteurized egg yolk or egg white
2. 500ml buttermilk (kærnemælk)
3. 1 TBS freshly squeezed lemon juice
4. 1/2 vanilla pod
5. 1 1/2 TBS sugar or honey
Directions:
1. Cut open the vanilla pod and scrape the vanilla inside with a knife.
2. Mix vanilla with the sugar.
3. Beat egg and vanilla sugar with an electric mixer until airy and stiff.
4. Add in all the other ingredients (vanilla, buttermilk and lemon juice and mix well.
Additional Information:
I just realized that it is pretty easy to make the Danish buttermilk dessert called koldskål. It is actually very healthy (if you reduce the sugar level). If you would like to have a more creamy texture, you can substitute half of the buttermilk with the Danish thick milk called "tykmælk." I made it with J today.
