Additional Information:

Durum flour is high in protein and well suited to making pasta. because they are more easily stretched into long pieces without breaking. The Italians use them to make pasta. According to Nutrition Over Easy, “Durum” is a strain of wheat that is used mostly for pasta, due to its higher protein content. (Think of “Durum” as its first name and “Wheat” as its family name.) But unless it says “whole grain” you can assume that it is refined, which means that the nutritious germ and fibrous bran have been removed.

The word “Semolina,” on the other hand, refers to the fact that the durum wheat is coarsely ground–again, in order to produce good pasta texture.

Durum semolina flour contains 15g of protein per 100g of flour, higher than normal flour.

Below is the original recipe. The one shows above is of the same proportion.

1. 250g of Semolina flour (Semola mel)
2. 1 egg with water totaling 110ml (or 95ml water without egg)

3. 2 tsp salt (for cooking pasta)
4. 2L water (for cooking pasta)

Additional Information:

Trying out a new mini macaroni pasta die today :-)

Added 12.5% whole grain for nutrients and 3 eggs.
C likes to eat it plain before any sauce or ketchup. Power packed with eggs (protein) as much as possible in pasta and no preservatives, I can rest a little easier if she eats it plainly without any meat 😅

C said it tasted exactly like store-bought ones.
It takes about 30 seconds to wash the die after it’s fully dried, definitely less than a minute.
Cultivating our children to eat fresh pasta instead of store-bought ones surely takes hard work. Once eating habits are fixed, it’s hard to change… such as white rice… etc.

It’s for our children I chose to be a full-time mom.
So much fun, so much hard work, so much fun.
All rolled into one
How long will it last?
Cherish it, treasure it, while it lasts.
Motherhood is a calling,
A high calling.
Giving it my very best 💪💪
No regrets ❤️
In God we trust ❤️

P.S. The badly cut macaroni was C’s work in training.

P.P.S. If you are using only Semola flour without adding the Graham flour, use 3 eggs and 1 teaspoon of olive oil with water (if required) to total 175ml (not 180ml).

Among the different ramens - Miso ramen, Tonkontsu ramen, etc., Our Little FECS likes the Shoyu ramen best. It is also one of the easiest ramens to make. Shoyu basically mean soy sauce based soup. I tried this today and Little FECS ate it after coming back from school. He gave a thumbs up,  and said that it is the tastiest one so far, after trying many different ones :-) Daddy FECS too likes this soup base best.

Philips Viva Pasta Maker

I got this Philips pasta maker since 2 October 2019 and love it since. Fresh pasta is done in 20 minutes ready to be cooked. We hardly consume store-bought pasta, since we got this machine. I make my own whole-wheat noodles with this machine.

Simply weigh:

- 200g flour with 75ml water or

- 200g flour with 80ml 1 egg + water or

- 200g whole-wheat flour with 85ml water or

- 200g whole-wheat flour with 90ml 1 egg + water

If using 400g flour, measurement as follows:

- 400g flour with 150ml water or

- 400g flour with 160ml 2 eggs + water or

- 400g whole-wheat flour with 170ml water or

- 400g whole-wheat flour use 180ml 2 eggs + water

Cleaning up is easy too - just wait until the dough dries up, knock them out and rinse.

Storage:

Fresh pasta can be refrigerated for a few days. To keep pasta from sticking together, sprinkle with a little flour. For best results, partially cook pasta before storing - then finish cooking it when you need it.

Fresh pasta can also be frozen.

Fettuccine Noodles - Egg, Water % 100% Wholewheat

Serves 4 - 6

Ingredients:

1. 400 g white whole wheat flour
2. 3 eggs + water to 180 ml
3. 1/8 tsp salt (optional)

Directions:

1. Add flour into the compartment and close the lid.
2. Turn on Pasta Maker. Select program 1 and press start.
3. Add egg first to the included liquid measuring cup, beat egg and then add water.
4. Slowly add in egg mixture through the opening on the lid. The machine will mix and knead the dough for 3 minutes and start to extrude noodles thereafter. *
5. Cut noodles to preferred length.
6. The whole process takes 18 minutes.
7. Make an extra extrusion session for the leftover dough in the machine, if required.
8. Boil a pot of water, add a bit of olive oil and salt. Add in the noodles and boil for 2 minutes or until al dente. Don't overcook the noodles.

Additional Information:

Store-bought noodles are tasty, but lacking in nutrition value, especially the Chinese noodles. It's hard to come across a wholemeal Chineese noodles, and if I ever come across one, I often wonder if it is authentically wholemeal. Thus, I love my Philips Pasta Maker. It enables me to make noodles that are actually nutritious. The best of all, it is actually easy and fast too.

You might worry about cleaning up. It's actually very easy. Just let the parts dry and knock out the leftover dough from the machine. Then wash them with dish detergent.

I prefer the smaller VIVA version, as it doesn't take up so much space and is more sleek in design, compared to the bigger version.

I made this noddles using only eggs to provide the liquid part of the noodle dough. Fill the measuring cup to 180ml with three eggs and just top the remainder up with water.

All done. It's ready to be cooked (I forgot to take a picture of it, after it was cooked :-( )

Miso Ramen

Adapted from Just One Cookbook

Ingredients:

Ramen Noodles:

Makes 4-5 servings of 75g ramen noodles each

Or make your own:
1. 400 g white whole wheat flour
2. 1/2 tsp salt
3. 1 tsp kansui alkaline water
4. 180ml liquid = 2 eggs + water (170g water if not using eggs)

Toppings:

1. 1 packet of 125g blanched bean sprouts
2. 1 can corn kernels drained
3. 1 sheets nori seaweeds cut into 4 quarters.
4. 2 stalk spring onions minced
5. 4 medium boiled eggs (boil eggs in a pot of water for 7 minutes)
6. 1 packet enoki mushrooms cooked
7. 4 leaves of bok Choi Chinese vegetables blanched (optional)
8. 1/2 tsp garlic oil (optional)

Soup:

1. 1 litre of soup stock such as chicken stock or pork stock.
2. 2 cloves garlic minced
3. 2 shallots minced
4. 2 slices of ginger minced
5. 1 TBS cooking oil
6. 1 cup soymilk (optional)
7. 3 TBS miso paste
8. 1 TBS sake
9. 1 TBS sesame seeds ground
10. Salt & pepper to taste

Eggs:

1. 2 TBS soy sauce
2. 1 tsp of grated ginger
3. 4-5 boiled and shelled eggs

Minced pork:

1. 400 - 500 g minced pork
2. 2 cloves garlic minced
3. 2 shallots minced
4. 2 slices of ginger minced
5. 1 TBS cooking oil

Directions:

1. To make medium-boiled eggs, in a small pot, bring to boil and add the eggs. Reduce heat to 6.5 on my stove and cook for 7 minutes. Drain in cold water immediately and remove the shell. Place the eggs into a bowl filled with some soy sauce and grated to get a little color on the eggs.

2. To make the ramen noodles, I add 400 g of white wholewheat flour into the Phillips VIVA pasta machine. Add 1/2 teaspoons of salt, 1 tsp of kansui alkaline water and fill the rest of the container up to 180ml with water. Pour it into the machine gradually. The machine will rotate to knead the flour into a dough and extrude it into noodles. I am not sure if it tastes like ramen noodles, but we like it enough :-)

4. On a wok, fry garlic, shallots and minced ginger until fragrant.
5. Add minced pork and fry until it's no longer pinkish.

6. To make soup, in a pot, fry garlic, shallots and minced ginger until fragrant.
7. Add 3 tablespoons of miso paste.

7. Add 1 tablespoon of sake.

8. Add 1 tablespoon of ground sesame.

9. Add in chicken broth or pork broth.

10. Add 1 cup of soy milk - I use homemade soy milk myself made from the soymilk machine, but store-bought one is fine.

11. Let it simmer, while you cook the noodles.

12. Bring to boil a pot of water - make sure you it's quite a lot.

13. Add noodles and cook until they float to the surface.

14. Scoop noodles into a bowl, ladle the soup over it and add your desired toppings :-) Enjoy :-)

Additional Information:

J has a craving for ramen. The last time we had was in March. Since the restaurants are now still closed due to the Coronavirus situation. We decided to make it at home. So I started doing my research and come across this blog post from Just One cookbook. We went together to the Chinese grocery store and the supermarket to get the ingredients. J helped me to make the medium-cooked eggs and the cooking. It took us one whole day to make this dish. We were able to eat dinner only at 7 pm, which is an hour later than usual. It's a lot of work, since we also have to get the toppings ready. I also made a tare to go along, but realized it wasn't needed, since the soup is already very favorable with the miso paste, etc. Fortunately Daddy FECS like the ramen and the soup base too :-) He took an additional serving.

I like to add soy milk into the soup base of the ramen. I learned it from Just One Cookbook, and it does make the soup richer and even more nutritious :-)

I use the Philips VIVA pasta maker to make the ramen noodles.

Sorry, the eggs didn't look so good, because my son was playing with it and poking holes into them. But they tasted good :-)
