Makes 8
Ingredients:
1. 2 bananas
2. 2 eggs
3. 2 TBS cacao powder
4. 4 TBS rolled oats
5. A bit of cooking oil for frying
Directions:
1. Mash bananas with a fork and mix it with egg, cacao powder and rolled oats. You can also blend them all up with a stick blender.
2. Heat pan with a bit of cooking oil and turn down to medium heat (no. 7.5 out of 9 on my stove).
3. Spread 2 TBS of the pancake mixture out with a spoon, but it shouldn't be too thin.
4. Fry the pancakes for 1-2 minutes on each side.
5. Serve them on its own, with maple syrup, fresh fruit and berries, or with sliced banana :-)

Our Little FECS got up early to make these pancakes for the family us today on a Saturday morning. In general, he is an early-riser type. He prioritizes family time a lot and would very often suggest family time over computer games or play dates. He also does a lot to prepare for our (suppose to be) weekly/monthly family time. He found this recipe himself over the net and made the pancake mixture himself, although at this age, we still need to work a bit on the cleaning up the mess side ;-). I was very touched at his maturity and his craving for family time. However, he got a bit upset, when mommy and daddy could not get out of bed.
I used to wake up early around 5am, before all the family members did, and prepared breakfast for everyone, when we only had one child and our Little FECS was much younger then. However, with two kids and juggling a full-time job, I find myself trying to catch up on my sleep during weekends... got to work on this and find a solution :-) It's hard to strike a good work life balance, and I especially need God's wisdom in this area.
