Easy Stove-top Candied Almonds


Yield 4-6 cups of candied almonds

Ingredients:

1. 1 cup sugar
2. 1/2 cup water
3. 1 TBS cinnamon powder
4. 4 cups almonds (if you reuse the leftover sugar, you can make an additional 2 cups of almonds)

Directions:

1. Add 1/2 cup water, 1 cup sugar, and 1 tablespoon of cinnamon powder into a saucepan over medium heat (no. 4-6.5 on my stove) and bring to a boil.

2. Add 4 cups of almonds and stir until the liquid evaporates and leaves a syrup-like coating on the almonds. 

3. Transfer the almonds onto a baking sheet lined with baking paper to cool down and enjoy :-) 

Tips:

Don't waste the leftover sugar. Add 1/2 cup water to the leftover sugar crystal in the pot and bring to a boil. Add another 2 cups of almonds and coat them until the water evaporates.

Additional Information:

Christmas is in the air... on the streetwalk, the smells of candied almonds from the sidewalk vendors filled the air... aaahhh, why don't we make our own? It's a cozy activity to do with Little FECS. We finally get to do it today, as due to COVID, all the weekend activities are cancelled, and we stayed home.

The original recipe asked for 1 cup sugar to 2 cups almonds, but I find that 1 cup sugar to 4 cups almonds still gives super sweet candied almonds. With the leftover sugar, we were even able to rework and made an additional 2 cups of candied almonds. So all in all, 1 cup of sugar yields 4-6 cups of candied almonds :-)

I have come across some complicated recipes that require deshelled almonds and roasting them in the oven, but they are unnecessary seen in my opinion. Making them on the stove-top is fast, simple and easy. Actually, it is also not necessary to cool them on a baking tray, you can just cool them anywhere you wish.

P.S. I actually made a jar of semi-sweet candied almonds (third batch) from the leftover of the leftover sugar after the second batch. So for us, it yields a total of 7 cups of candied almonds out of 1 cup of sugar.

Pictorial Steps:

Add 1/2 cup of water

Add 1 cup of sugar

Add 1 tablespoon of cinnamon powder

Stir well and

bring it to boil under medium heat (no. 6.5 out of 9 on my stove)

Add 4 cups of almonds

Stir and coat well under medium-low heat (no. 4 on my stove)




When the water fully evaporates, it is done :-)

Transfer to a baking tray laid with a baking sheet to cool down.
