Chinese Wanton Soup (Chinese “ravioli”)

Adapted from Jannie’s recipe

Serve 5 - 10 (Make approx. 100 wantons)

Ingredients:
1. Caixin (2 stalks with leaves per serving)

2. Wanton skin (3 packets)

3. Minced spinach (1 packet or 500 g)

4. Minced pork approx. 3-7% fat (500 g)

5. Chopped Prawns (200 g)

6. Chopped Chinese mushroom ( 8 – 9)

7. Chopped ginger (10 slices)

8. Chopped spring onions (1 – 2 stalks) (optional)

9. Chopped onion (1) (optional)

10. Garlic (1 -2 cloves)

11. Oyster sauce (1 tablespoon)

12. Light soya sauce (2 tablespoon)

13. Chinese rice wine (1 table spoon)

14. Sesame oil (1 – 2 tablespoon)

15. Pepper (1/2 teaspoon)

16. Salt or sea salt (1/2 teaspoon)

17. Water (1 litre)

Sauce:
18. Dark Chinese vinegar (1/2 bowl)

19. Light soya sauce (1/4 bowl)

20. Sesame oil (1/4 bowl)

21. Chopped or squeezed garlic (1 clove)

22. Chopped spring onions (optional)

23. Chilli oil (optional)

Directions:
1. Prepare the filling by mixing chopped onions, chopped ginger, pork and prawns and marinade with oyster sauce, soya sauce, Chinese rice wine, sesame oil, pepper and salt. Add chopped spring onion and mixed well and leave for 30 mins.

2. Sprinkle salt on the minced spinach in a separate bowl.

3. Wash and drain caixin.

4. Spoon 1 round teaspoon of filling and 1 flat tea spoon of spinach on the middle of the wanton skin (If you prefer more vegetables, adjust accordingly). Fold the 4 bottom points over the filling and twist to wrap tightly. If necessary, seal it with water.

5. Bring to boil a pot of stock with water and the shells of prawns that you have de-shelled while preparing the chopped prawns. Discard the shells.

6. Dump in 20 wantons into the pot and boil for 3 – 3.5 mins until cooked (when the wanton skin appear wrinkled, translucent and float on the surface).

7. Half way through the 3 – 3/5 mins, add in 4 stalks of Caixin.

8. Prepare the sauce for the wantons with a bowl of dark Chinese vinegar (1/2), soya sauce (1/4), sesame oil (1/4) and chopped or squeezed garlic

9. Sprinkle some chopped spring onions into soup. Serve with sauce.

Tips:
1. Freeze the other wantons for a quick meal next time :-)
