If you have found a soulmate, that's great. Enjoy it while it lasts. 

Marriage is dynamic. What and who you are at 20, is different from what and who you are at 30, and is different from what and who you are at 40 or 70.

For example, failures may change a person for better or for worse. But success may also change a person for better or for worse.

Regardless of whom you married, the fundamental differences between a man and a woman, the differences and habits resulted from the different family backgrounds and childhoods' experiences, etc. will surface in a marriage sooner or later.

What do you do then?

Do you "divorce" away your problems or fight to come closer to each other, to walk with each other?

From the research and surveys of second or third marriages, the grass is NOT greener on the other side. In fact, it only gets worse with second or third marriages.

Do you stay single then?

Every human being's deepest longing is to be known and loved fully and vulnerably, and yet to be fully accepted. Be that for your spouse and you will experience the richest and deepest relationships of all - marriage.

Be willing and be adamant to be a sole mate for your spouse... someone cheerful to walk the life's journey through...

thick and thin, 
in sickness or in health, 
for riches or for poorer.

It takes emotional muscles to do so... and wow, that's true love!

Dear God, in our marriage, help us to walk the extra mile cheerfully with our spouse and be a sole mate for life, living out our marital vow with power and conviction.

Encouragement for Your Marriage: Every Good Marriage Begins with a Funeral

 

 Every good marriage begins with a funeral.


For two people to become one, parts of the individuals have to die - die to our preferences, our comforts, and even our desires.

For a new plant to grow, a seed has to fall onto the soil and die. From there a new life begins, grows and thrives.

Marriage is the beginning of a new life, but it can only truly become a deeply satisfying united oneness with death to oneself.

This is the paradox of marriage and life: The irony is death truly brings life, a deeply satisfying life together.

Our First Time Cutting Down a Christmas Tree

 

This was our first time cutting down a Christmas tree ourselves. We were very excited. The plantation is in Roskilde. It took us approx. 40 minutes to drive there. The weather today was quite warm, around 6 degree celsius, unlike last week. With such mild winter weather today, it was really nice taking a walk among the Christmas trees. It was very beautiful, almost fairy-tale like to walk in the Christmas trees "forest". The kids enjoyed this activity a lot. Baby FECS was surprisingly patient today. It took us a long time, before finally selecting a tree. It cost 140 DKK per metre. We chose a small tree that was around 1m. Due to COVID-19, this year, the plantation didn't serve any Christmas goodies and food for sales. But there are cute Christmas decorations for sale.

They sell two species of Christmas trees, Normann and Rødgran. The Normann Christmas trees are twice more expensive per metre, but it has more dense needles than Rødgran and look nicer than Rødgran Christmas trees.

We will probably repeat this activity next week.

Merciful love is I love you in spite of...


A Princess of Grace works hard at both merited love and merciful love.

Merited love is why you first got married. It's important in a marriage. Work to give your spouse more reasons to say “I love you because…”

E.g. of merited love:

I love you because of the way you look into my eyes.
I love you because you are so sweet.
I love you because of your beautiful hair.
I love you because of your beautiful smile.
I love you because you are so intelligent.
I love you because you are so sporty.
I love you because you are so kind to my parents.
I love you because you work so hard to support the family.
I love you because of your high integrity and ethics in life.

But human beings are imperfect. For a marriage to thrive and last, merciful love needs to enter and stay.

E.g. of merciful love:

I love you in spite of your white hair.
I love you in spite of your snoring.
I love you in spite of your coming home late for dinner.
I love you in spite of your grumpiness every now and then due to the stress of life.
I love you in spite of you hurting my feelings and stepping on my toes every now and then.
I love you in spite of you leaving clothes on the floor after countless reminders.
I love you in spite of the way you fold the clothes after countless tutorial sessions on how to fold clothes.
I love you in spite of you forgetting to refill the ice-cubes in the freezer yet again.

Merciful love stems from grace. It is unconditional love in daily work clothes.

Merciful love is hard. It is supernatural, but it is true love.

When you give merciful love, God sees it, and you are blessed in many different ways you could not even think of.

“Good sense makes one slow to anger, and it is his glory to overlook an offense” (Proverbs 19:11)

Easy Stove-top Candied Almonds


Yield 4-6 cups of candied almonds

Ingredients:

1. 1 cup sugar
2. 1/2 cup water
3. 1 TBS cinnamon powder
4. 4 cups almonds (if you reuse the leftover sugar, you can make an additional 2 cups of almonds)

Directions:

1. Add 1/2 cup water, 1 cup sugar, and 1 tablespoon of cinnamon powder into a saucepan over medium heat (no. 4-6.5 on my stove) and bring to a boil.

2. Add 4 cups of almonds and stir until the liquid evaporates and leaves a syrup-like coating on the almonds. 

3. Transfer the almonds onto a baking sheet lined with baking paper to cool down and enjoy :-) 

Tips:

Don't waste the leftover sugar. Add 1/2 cup water to the leftover sugar crystal in the pot and bring to a boil. Add another 2 cups of almonds and coat them until the water evaporates.

Additional Information:

Christmas is in the air... on the streetwalk, the smells of candied almonds from the sidewalk vendors filled the air... aaahhh, why don't we make our own? It's a cozy activity to do with Little FECS. We finally get to do it today, as due to COVID, all the weekend activities are cancelled, and we stayed home.

The original recipe asked for 1 cup sugar to 2 cups almonds, but I find that 1 cup sugar to 4 cups almonds still gives super sweet candied almonds. With the leftover sugar, we were even able to rework and made an additional 2 cups of candied almonds. So all in all, 1 cup of sugar yields 4-6 cups of candied almonds :-)

I have come across some complicated recipes that require deshelled almonds and roasting them in the oven, but they are unnecessary seen in my opinion. Making them on the stove-top is fast, simple and easy. Actually, it is also not necessary to cool them on a baking tray, you can just cool them anywhere you wish.

P.S. I actually made a jar of semi-sweet candied almonds (third batch) from the leftover of the leftover sugar after the second batch. So for us, it yields a total of 7 cups of candied almonds out of 1 cup of sugar.

Chinese Dumplings

 

Ingredients:

Dough:
1. 1kg of flour
2. 2 eggs + water total 500g (1.5 - 2 cups water approx. 360-480ml)
3. 2 tsp salt

Flour: Liquid Ratio
2:1

Filling:
1. 1 kg of minced chicken
2. 8 carrots shredded thin
3. 1/2 or 8 leaves of Chinese cabbage chopped
4. 1 bunch of spring onions chopped
5. 1 leek chopped
6. 2 eggs
7. 3 TBS light soy sauce
8. 3 TBS dark soy sauce
9. 3 TBS oyster sauce
10. 3 TBS sesame oil
11. 1 tsp sugar
12. 1 tsp salt
13. Dash of pepper

Frying and steaming:
1. 1 TBS cooking oil
2. 1/3 cup water

Directions:

1. Add salt to Chinese cabbage and leave it while working on the rest of the ingredients. Then squeeze and remove the water from the cabbage.

2. Knead the dough until firm and the dough doesn't stick to your hands. It should be elastic, but not too soft. I use a mixer and run it for 10 minutes. If possible, leave aside for 30 minutes, especially if you don't use a mixer to knead the dough.

3. Mix the meat, carrots, spring onions, leeks and sauce together and use hands to combine them well.

4. Cut a portion of dough out and roll it into a long line.

5. Cut the dough approx. 2 cm (2.5 by 2 cm).

6. Roll into a round flat dumpling shape with a rolling pin (best using the Chinese rolling pin).

7. Wrap with a bit of the meat mixture as shown.

8. Heat the pan until hot, and add cooking oil. 

9. Add dumplings, reduce fire to medium (no. 6.5 out of 9 on my stove) and fry until the bottom is lightly golden.

10. Add 1/3 cup of water into the middle of the pan, cover and reduce heat to no. 4 on my stove.

11. Once the dumplings change color to yellowish, remove the cover and let the water slowly evaporates. You can turn up the heat to no. 5. Once the water evaporates, they are done :-)

Additional Information:

A Chinese lady whose son owns a Chinese restaurant in Denmark taught me this. If you prefer pork, you can also use minced pork, although according to her, it is tastier to use minced chicken then minced pork.

To chop the cabbage, cut the leaves diagonally length-wise, then straight breadth-wise. Do the same for leek.

She said that the dough should be firm, but not too soft. For dumplings, it is easier to work with a harder dough.

She said it is best not to use a mixer to mix the minced meat, as it will be too mushy and the taste won't be good. It is best to use hands.

She also told me that it has to be pan-fried to get a bit of crusty bottom and then add a bit of water, with lid over to create steam to cook the meat in the dumplings. She told me that cooking dumplings this way will also keep the shape of the dumplings much better than boiling them.
