Homemade Strawberry Ice-cream Without Using Any Machine


Serves 8

Preparation Time: 45 minutes (excluding freezing)

Ingredients:

1. 200g strawberries blended
2. 300ml whipped cream (piskefløde)
3. 2 egg yolks
4. 3 TBS sugar
5. 1 tsp vanilla sugar
6. 2 TBS honey
7. 1 TBS lemon juice (approx. half a lemon)
8. 100g chopped almonds (optional)
9. 100g chocolate chips (optional)

Directions:

1. Blend strawberries with a blender.

In a mixing bowl, add egg yolk, sugar and vanilla sugar and beat until airy and combined with a hand mixer.

2. In another bigger mixing bowl, add whipped cream and beat until a yogurt-like consistency is reached with a hand mixer.

3. Add the egg yolk mixture into the whipped cream, folding and combining them gently with a spatula.

4. Gently stir in the strawberries, chocoloate chipes and the chopped almonds.

5. Transfer into a container and freeze for 5 hours. Enjoy :-)

Additional Information:

Summer time is the time where Danish kids eat a lot of ice-cream. In continuation of making ice-cream, today, I am making another of my favorite - strawberry ice-cream. This is a very easy recipe and you don't need any ice-cream machine, but the ice-cream comes out just like ice-cream :-)

I like like to add chocolate chips and chopped nuts into my strawberry ice-cream, but it is of course not a necessity.

Blend 200g stawberries

Add 1 tablespoon lemon juice (approx. half a lemon)

Add 2 tablespoon honey and mix well. Set aside.

 Add 2 egg yolks

Add 1 teaspoon vanilla sugar

Add 3 tablespoons of sugar

   Beat egg yolk mixture

 300ml cream (piskefløde)

 Whip cream until yogurt-like consistency is achieved (Don't over-beat)

 Combine egg yolk mixture with whipped cream and gently fold them with a spatula

Add blended strawberries.

 Gently stir and...

Mix well.

Add chocolate chips and chopped almonds... (optional)

Gently stir and...

Mix well.

Transfer to a container

Cover and freeze overnight. Then it is ready to serve :-)

Easy Danish Curry Meatballs (Boller i Karry)


Serves 4 

Ingredients:

Meatballs:
1. 500g minced pork
2. 1 egg
3. 1 onion diced
4. 50ml flour - I use white whole wheat flour
5. 100ml skimmed fresh milk
6. 1 tsp salt
7. Dash of pepper

Sauce:
1. 2 TBS butter or cooking oil
2. 3 tsp curry powder
3. 3 TBS flour - I use white whole wheat flour
4. 200 ml skimmed fresh milk
5. 400 ml water
6. 1 tsp salt
7. Dash of pepper

Directions:
1. In a mixing bowl, add 500g minced meat, egg, 50ml flour, 100ml skimmed fresh milk, 1 teaspoon salt and pepper.

2. Blend well with a hand mixer and set aside for 30 minutes in the fridge.

3. In a pot, add 2 tablespoons butter or cooking oil and heat it up.

4. Under medium heat (no. 5.5 on my stove out of 9), add 3 teaspoons of curry powder, stir and mix well.

5. Add 3 tablespoons of white whole wheat flour, stir and mix well.

6. Add 200 ml of milk and 400 ml of water, salt and pepper, stir and mix well, boil until you achieved the desired consistency.

7. Form meatballs into shape using an ice-cream scope and add it into the pot.

8. Cover and simmer for 20 minutes under low fire (no. 2.5 on my stove) or until cooked.

9. Serve with brown rice :-)

Additional Information:

This is a classic Danish dish that my family loves. I follow the easy recipe from Børnevaisen which is very tasty. I sometimes add 1 potato cut into bite-size and long beans and simmer them together with the meatballs until cooked.

You can substitute the flour in the meatballs with rolled oats too.

Easy Danish Fish Cakes (Fiskefrikadeller)


Serves 4

Ingredients:

1. 250g cod
2. 250g salmon
3. 1 egg
4. 2 TBS white wholewheat flour, corn starch or potato flour. 
5. 2 TBS piskefløde (cream)
6. 1 tsp salt
7. 6 turns black pepper mill
8. 2 TBS cooking oil (or you can use a mixture of butter and cooking oil)
9. Dill for garnish

Directions:

1. Blend fish, egg, flour, cream, salt and pepper in a food processor. 

2. Let the mixture rest for 15-30 minutes in the fridge if you have the time.

3. Heat cooking oil on a pan.

4. Use an ice-cream scoop to form the mixture into fish cakes and fry them on medium heat (no. 5 on my stove) for 5 minutes on each side or until golden using medium heat to ensure the fish is cooked without burning the fish cakes. It's important to be patient when frying the fish cakes and not use a higher heat.

5. Garnish with some chopped dill or parsley and serve.

Tips:

You can also bake them in the oven at 225 degree celsius for approximately 15-20 minutes.

To keep them warm, you can leave them in the oven at 80 degree celsius until you are ready to serve them.

Additional Information.

I have made a post on Danish fish cakes before, but this is a simpler recipe that I use when I am pressed for time. I serve this dish with potatoes and salad on the side. It is a dish that my family likes a lot. 

There is a slight, but noticeable difference with using the cream or not using the cream. The cream makes them just a tard juicier.

Homemade Vanilla Chocolate-chips Ice-cream Without Using Ice-cream Machine


Serves 8

1. 600ml whipped cream (piskefløde)
2. 6 egg yolks
3. 6 TBS sugar (approx. 72 g)
4. 2 tsp vanilla sugar (approx. 8 g)
5. 1 tsp vanilla powder (optional)
6. 100g chocolate chips
7. 100g chopped almonds

Directions:

1. In a mixing bowl, add egg yolk, sugar and vanilla sugar and beat until airy and combined with a hand mixer.

2. In another bigger mixing bowl, add whipped cream and beat until a yogurt-like consistency is reached with a hand mixer.

3. Add the egg yolk mixture into the whipped cream, folding and combining them gently with a spatula.

4. Add in the chocolate chips and the chopped almonds and mix well.

5. Transfer into a container and freeze overnight. Enjoy :-)

Additional Information:

This is a very easy recipe. You don't need an expensive ice-cream machine. It is a recipe I got from the Danish newspapers for kids Børne Avisen. It tasted just like store-bought ice-cream - rich and creamy, but not overly sweet like the store-bought ones. It's of course still not so healthy as it is made of whipped cream. But my kids love this recipe. So it is a once-a-while indulgence. I use the pasteurized egg yolks. Daddy FECS and the kids love it :-) I made this with Baby FECS on 23 August 2020 (4Y3M7D). She really enjoyed it.

At bedtime, I said it is time for her to sleep. She said, "No." A minute later, she said, "Sorry Mommy." I think it is because I have spent time with her making the ice-cream. I quit my job and my last day was 7 August. For the past 6 months, I had been so busy working that I haven't spent much time with her. Within just two weeks, we have a different level of closeness. She was very thankful and discipline gets easier. I am recording this, as I want to remember this. And I am thankful to Daddy FECS for allowing me to be a SAHM.

 6 egg yolks

Vanilla powder

Vanilla sugar 

 Sugar

 Beat egg yolk mixture

  Egg yolk mixture done

 Cream (piskefløde)

 Whip cream


 Combine egg yolk mixture with whipped cream and gently fold them with a spatula

 Add chocolate

Add chopped almonds

 Transfer to a container

 Cover and freeze for at least 3 hours
