6. Cook for 3-4 minutes.
7. Turn the chicken around.
8. Cover with aluminum foil and place a heavy pot on top to keep the meat flat.
9. Cook for 1-2 minutes until cooked.
10. Serve with blanch broccoli and sprinkle with spring onions.

Additional Information:

There is no oil needed in this dish. Thus, it is a healthy dish. The oil from the chicken skin helps to fry the chicken. If you don't want to eat the skin, just remove it when you are eating it. I learned to make this dish from a dear friend, Jenny.

Marinade the chicken drumsticks with pressed garlic, soy sauce, salt and pepper.

Leave it in the fridge for 30 minutes if possible.

Heat pan until hot and place chicken skin side down and reduce heat to medium (no. 7 on my stove)

Cover the chicken with aluminum foil.

Place a heavy pot on top to keep the chicken flat while it is being fried. Fry for 3-4 minutes.

Turn the chicken pieces around.

Cover the chicken with the aluminum foil again.

Place a heavy pot on top of it again and fry for 1-2 minutes until the chicken is cooked.

Now it is done :-)

Add the blanched broccoli (optional)

Sprinkle with chopped spring onions (optional)

Your chicken chop is ready :-) Serves with roasted potato wedges, broccoli, carrots and some sauce. I served with mushroom sauce here.
