Oven-roasted Candied Almonds


 
Makes 1 tray

Ingredients:

1. 3 cups raw unsalted almonds
2. 1 egg white (30g)
3. 1/2 cup sugar
4. 2 tsp ground cinnamon

Directions:

1. Preheat oven to 120 degree C (250 degree F).

2. In a large mixing bowl, add egg white.

3. Add almonds and mix until evenly coated.

4. Add sugar and mix well.

5. Add cinnamon powder and mix well.

6. Spread the almonds evenly on a single layer on a baking tray laid with baking paper.

7. Bake at 120 degree C (250 degree F) for one hour.

8. Remove from oven, stir and let cool. Enjoy!

Storage:

Store in an airtight container at room temperature or in the freezer.

Additional Information:

The whole family likes it especially my father-in-law. I cut the sugar to 1/2 cup compared to the original recipe and the candied almonds still tasted  very sweet.

Sometimes I use pasturized egg white that comes in a 40g packaging. In this case, I would use the following pro-rated proportion:

1. 4 cups raw unsalted almonds
2. 1 small container of egg white (40g)
3. 2/3 cup sugar
4. 2 tsp cinnamon
