How to Make Golden Syrup (Invert Sugar Syrup)?



1. 600g sugar
2. 300ml water
3. 1 lemon juiced


1. In a pot, add water, sugar and lemon juice and mix together.

2. Bring to boil.

3. Lower to medium heat and let it lightly bubble until temperature reaches 112 - 118 degree Celsius or the color looks lightly golden. At this point it is still looking watery.

4. Off fire and let cool.

5. Store in a jar. When it cools down, it will thicken. Your golden syrup is done and ready to be used :-)

The golden syrup will darken in color over time.
