Chocolate/Coffee Cake

 


Makes 10 servings

Ingredients:

1. 1 cup white whole wheat flour
2. 3/4 cup sugar
3. 1/2 cup cacoa powder
4. 1 tsp vanilla
5. 1/2 tsp baking soda
6. 1/4 tsp baking powder
7. 1/4 tsp salt
8. 3/4 cup skimmed fresh milk 0.1% fat
9. 1/4 cup olive oil
10. 1 egg
11. 2-3 apples grated
12. 1-2 handful of desired nuts such as walnuts, cashew nuts and/or almonds

Frosting:

1. 1 bar of white chocolate 170g
2. 50g butter
3. 1/4 cup castor sugar
4. 1 TBS decaf coffee powder

Directions:

Cake:

1. Preheat oven to 350°F/175°C. Grease and lightly flour a 9x1-1/2-inch round or 8x8x2-inch baking pan.

2. In a large mixing bowl combine flour, sugar, cocoa powder, vanilla powder, baking soda, baking powder, and salt. 

3. Add milk and olive oil and beat with an electric mixer on low speed until just combined. Beat on medium speed for 2 minutes. 

4. Add egg and beat 2 minutes more. 

5. Add grated apple and nuts and mix well.

6. Pour batter into prepared pan.

7. Bake for 45 minutes or until a wooden toothpick comes out clean. 

8. Let the cake cool for 10 minutes. Remove cake from pan. Cool thoroughly on a wire rack. To serve, sprinkle with powdered sugar and transfer to a serving plate.

9. Decorate with frosting.

Frosting:

1. Melt butter in a microwave for 30 seconds to 1 minute.

2. Then melt white chocolate in the microwave for 30 seconds to 1 minute.

3. Blend in the coffee powder.

4. Blend in the castor sugar.

5. If the chocolate and butter separates, this can be fixed by adding one tablespoon of hot water at a time and stir. it will recombine :-)

Additional Information:

Daddy FECS tried this cake in the office and loved it. He got the recipe from his colleagues and I now bake it for his birthday and for family outings. We usually add cashew nuts. It's a quite forgiving cake in terms of measurement. Adding grated apple helps to keep the cake moist. Daddy FECS calls it the Super Chocolate/Coffee Cake :-)

If using frosting instead, use 200g powdered sugar hand whisk with 50g egg white. Add color as desired.
