Jerusalem Artichoke Soup (Jordskokkersuppe)



Serves 4


Ingredients:

1. 500g - 1 packet of Jerusalem artichoke peeled and chopped

2. 1 large onion peeled and quartered

3. 3 cloves garlic

4. 1 TBS cooking oil

5. 1 tsp salt

6. Dash of pepper

7. 1 L water or stock

8. 50ml cream


Directions:

1. Heat pan, add cooking oil, fry garlic, onion and Jerusalem artichoke.

2. Transfer into the Philips Soup Maker and add stock or water. Turn to cream soup setting and run it.

3. When it is done in 23 minutes, add in cream (optional) and serve.


Additional Information:

Jerusalem artichoke is in season now, and it is very tasty as a cream soup. It's is also good as chips, although J and I in our family like it in the soup form. It is high in protein and potassium. the only thing is that it is very time-consuming to peel them.

Easy Tomato Beetroot Soup


Ingredients:
1. 1 packet of cherry tomatoes (500g)
2. 1 carrot chopped large
3. 1 beetroot chopped large
4. 1 parsley root chopped large
5. 1 onion
6. 1 clove garlic
7. 1 slice ginger (optional)
8. 1 TBS olive oil
9. 1 tsp salt
10. 600ml water

Directions:
1. Add all the ingredients into the Philips soupmaker.
2. Close the lid and choose the cream soup setting.
3. The soupmaker will beep in 23 minutes and the soup is done :-)

Additional Information:
Daddy FECS made this soup for a light dinner tonight. I loved it so much that I asked him how he made it and quickly jot it down before I forget.

We garnished it with roasted green peas snack I made the other day and crispy spaghetti - we had some left over spaghetti and roasted it on a heated pan (no. 6 on my stove) with some oil. The garnish provided an interesting and contrasting texture to the soup.

If you don't have a soupmaker, you can blend the soup together with a blender.

Easy Cauliflower Cream Soup



Serves 4

Ingredients:
1. 1 whole head of cauliflower without the leaves (500g)
2. 1 large onion quartered
3. 2 cloves garlic peeled
4. 2 TBS olive oil
5. 1 TBS butter (optional)
6. 2 tsp salt to taste
7. 600-700 ml water (the minimum or maximum marking in the soupmaker)
8. 250 ml fresh milk or 100ml cream (piskefløde) (optional)
9. A bit of thyme for garnish (optional)

Directions:
1. Wash and cut cauliflowers into florets.
2. Add all the ingredients (except milk or cream) into the Philips soupmaker.
3. Close the lid and choose the cream soup setting.
4. The soupmaker will beep in 23 minutes and the soup is done :-)
5. If you like it even more creamy, transfer to a pot, add fresh milk or cream, stir to mix well and heat up until it slightly bubbles (optional)
6. Garnish with thyme, serve with bread as a starter or a light dinner and enjoy :-)

Additional Information:
I fell in love with cauliflower white sauce that we tried at the Laboca restaurant. A check at recipes online shows all shows a generous use of butter required, some uses the whole tub of butter!!! Alas, I decided to skip making cauliflower sauce, as it would be too tempting for me or my family to finish all the sauce, thus consuming one whole tub of butter, not the kind of food taste buds I would like to develop in our kids. Since I love soup, I decided to settle for this healthier cauliflower cream soup instead, that uses only 1 tablespoon of butter, and it is even optional.

I use water instead of chicken stock for this batch, and it tasted super for me. The whole head of cauliflower provided sufficient vegetable stock for this soup.

It is 100 ml extra to the maximum marking of the soupmaker.

Jerusalem Artichoke Cream Soup


Serves 4

Ingredients:
1. 500g Jerusalem artichokes washed, peeled and chopped
2. 2 potatoes chopped bit size
3. 2 large onions, 1 quartered and 1 diced
4. 4 garlic cloves, 2 minced
5. A handful of oyster mushrooms sliced (optional)
6. Thyme for garnish
7. Water 1 l.5 litres
8. 100ml cream (Kaffefløde 9%) (optional)
9. Salt & pepper to taste

Directions:
1. Place half of the Jerusalem artichokes, 2 garlic cloves, 1 onion into the Philips soupmaker and add water to the minimum line and start cooking and puree.

2. On a pan/pot, fry the garlic, onions, the remaining of the Jerusalem artichokes and potatoes. Add salt to taste. Transfer to pot, add water just enough to cover and let it simmer.

3. Add the puree from the soup cooker when done.

4. Add salt to taste.

5. Add cream as desired (optional)

6. Serve in bowls and garnish with thyme or other herbs.

Additional Information:
I love the Jerusalem artichokes soup that my work canteen serve. Today, there was an offer from IMRA supermarket and I bought 2 packets of Jerusalem artichokes to try to make soup and also to make a roast Jerusalem artichokes dish. Both Daddy FECS and I loved it, also Baby FECS, but our Little FECS didn't like it. He is apparently not fond of the smell and taste of Jerusalem artichokes. He refused to eat it :-(

Since I have the Phillps soup cooker, I use it to puree half of it. I love the consistency that the soup cooker does.

While waiting for the soup cooker to do its job, I fried the garlic, onions, mushrooms, potatoes and the other half of the Jerusalem artichokes.

Easy Homemade Cream of Mushroom Soup


Serves 6

Ingredients:
1. 350g button mushrooms chopped
2. 70ml cream (kaffefløde) (optional)
3. 1 medium onion or 1/2 large onion or 50g onion chopped
4. 1 clove garlic
5. 500ml water
6. Salt & pepper to taste
7. A handful of chives for garnish
8. 100g button mushrooms chopped and fried on the side with olive oil for garnishing

Directions:
1. Add all the ingredients into the soupmaker.
2. Close the lid and choose the cream soup setting.
3. The soupmaker will beep in 23 minutes and the soup is done :-)
4. Add in a handful of chopped mushrooms for chunk and turn setting to chunk soup for 5 minutes (or you fry a handful of mushrooms with olive oil and add into the soup as garnish)
5. Garnish with mint leaves, coriander or chives and serve.

Tips:
1. You can add a handful of grated cheese and serve with garlic bread.

Additional Information:
There is something really magical about this soupmaker. It makes really good mushroom soup. My Mr. FECS said that it was the best mushroom soup that I have cooked. I have been experimenting making cream of mushroom... by frying the garlic, onion and mushroom, but I have not been able to find a recipe that I could say, yes, this is how it should be.

But using this soupmaker, simply adding mushrooms, garlic, onion, water and a bit of cream, it makes really rice, nice and creamy mushroom soup with a lot of taste. There isn't any oil or frying involved.

My Mr. FECS and I were trying to uncover the secret of the magic soupmaker. We suspect that there are some hidden MSG that the manufacturer put insides that makes simple soup tastes so heavenly, but of course, we could not find anything.

We will be making more of this soup for ourselves (although not for our Little FECS, as he does not like mushrooms).

Easy Homemade Cream of Sweet Corn Soup


Serves 6

Ingredients:
1. 500g thawed frozen sweet corn or from can
2. 70ml cream (kaffefløde) (optional)
3. 1 medium onion or 1/2 large onion or 50g onion chopped
4. 630ml water
5. Salt & pepper to taste
6. 1 TBS white lentils (optional)
7. 1 tsp flaxseeds (optional)

Toppings:
6. A handful of fried bacon for garnish (optional)
7. A handful of coriander, mint leaves or chives for garnish (optional)
8. A handful of thawed frozen sweet corn for garnish and chunk (optional)

Directions:
1. Add all the ingredients into the Philips soupmaker.
2. Close the lid and choose the cream soup setting.
3. The soupmaker will beep in 23 minutes and the soup is done :-)
4. Add a handful of whole sweet corn for chunk.
5. Garnish with mint leaves, coriander or chives and serve.

Tips:
1. You can add a handful of pine seeds or pumpkin seeds as garnish.

Additional Information:
This is yet another soup that our family likes. I prefer without the bacon, but both my Mr. FECS and our Little FECS prefer with.

Easy Homemade Tomato Soup



Serves 6

Ingredients:
1. 1 pack of cherry tomatoes (500 g)

4. 1 slice ginger minced with skin on
5. 1 TBS olive oil
6. 1 carrot chopped coarse (optional)
7. 500 ml water
8. 2 tsp salt
9. 1 TBS red lentils (not more than this, as it will make the soup too thick)

Toppings:
11. A few basil leaves for garnish (optional)
12. Serve with a dash of greek yogurt, cream or creme fraîche (optional)

Directions:
1. Add all the ingredients into the Philips soupmaker.
2. Close the lid and choose the cream soup setting.
3. The soupmaker will beep in 23 minutes and the soup would be done :-)

Tips:
1. You can add a dash of olive oil and roasted onions as garnish.

Additional Information:
I have to say, this is a magic cooker. It is truly amazing. I love soup and my Mr. FECS gave this Philips Viva Collection Soupmaker to me for Christmas and I love it.

After a week of feasting at Christmas, we have been making soup everyday. It is amazing how tasty the soup turned out, considering how simple and basic the recipe is, and healthy too. There is no meat, no oil, just the vegetables, salt and pepper. I was a little sceptical initially, but decided to follow the recipe. And I was sold at the turn out. Even our Little FECS loves the soup, and my Mr. FECS too. We did not even add the garnishes and I did not even cook the soup with chicken stock. I reduce the sugar from the original 1 TBS to 1/2 TBS. If your tomatoes are super sweet during summer time, you can even skip the sugar all together. The taste and sweetness is purely from the vegetables. I have tried many of the other recipes - sweet corn, broccoli, carrot and chicken soup, and they all taste equally good.

The secret I think, as I study the recipe, lies in the proportion of vegetables and water - all the recipe is the same - 1 part vegetable and 1 part water.

It makes approx. 1.2 litre of soup, enough to serve 4. Initially I thought it seems a little on the small side, but I was wrong. It was enough for all of us.

And the best thing is, it is a tasty and effortless way for us to squeeze in all the vegetables and its vitamins into our diet. Our Little FECS does not like tomatoes at all. But he finished all his bowl of tomato soup and asked for more :-)

You can also use this tomato soup as a base for other dishes such as braised beef.

Easy Homemade Carrot Soup


Serves 6

Ingredients:
1. 400g carrots cut into cubes of 2 cm
2. 2 small potatoes or 50g of potatoes peeled and cut into cubes
3. 1 large onion quartered
4. 2 cloves garlic peeled
5. 1 slice of ginger minced
6. 1 TBS olive oil
7. 700ml water
8. 2 tsp salt
9. 1 TBS red lentils
10. 1 tsp flaxseeds

Toppings:
11. A handful of spring onions chopped for garnish (optional)
12. Serve with a dash of greek yogurt, cream or creme fraîche (optional)

Directions:
1. Add all the ingredients into the Philips soupmaker.
2. Close the lid and choose the cream soup setting.
3. The soupmaker will beep in 23 minutes and the soup is done :-)

Tips:
1. You can add a handful of pine seeds or pumpkin seeds as garnish.

This is the first soup we made with the soupmaker on Christmas Day 25 December 2014. After a week of feasting at Christmas, we decided to opt for a lighter selection with soup to celebrate on Christmas Day. It will be our Family FECS tradition for Christmas for many years to come :-)

Potato Leek Soup


Serves 4

Preparation & Cook Time: 45 minutes

Ingredients:
1. 3 tablespoon cooking oil, butter or half/half
2. 1 onion chopped
3. 2 garlic chopped
4. 3 leeks sliced thin (only the white portion)
5. 500g potatoes peeled and cut into cubes
6. 1.2 litre water or stock
7. 100 ml cream (piskefløde)
8. 1/2 lemon juiced
9. Salt & pepper to taste
10. A handful of bacon (optional)
11. A handful of chives or parsley chopped for garnish (optional)

Directions:
1. Heat pot with oil, fry garlic, onion, leeks and potatoes until fragrant until medium-high heat (not. 7 out of 9 on my stove) for 5 minutes.

2. Add stock or water and cook for 10-15 minutes until the potatoes are soft.

3. Blend using a hand-blender.

4. Add lemon juice, salt, pepper and cream and let it cook for a few minutes while you prepare the toppings.

5. Fry bacon on a pan on the side under medium heat (no. 6 out of 9 on my stove). You don't need to add oil, as the bacon will exude oil.

6. Garnish with chives and serve.

24 Oct 2014: J (5Y7M19D) harvested leeks from the kindergarten and took it home. He wanted me to make a dish of it. So we made the potato soup.
