Tomato Bacon & Broccoli Pasta

Adapted from Just One Cookbook
Serves 3-4

Ingredients:

1. 3 servings wholemeal organic spaghetti cooked according to packet instructions
2. 400g fresh pork belly sliced in strips
3. 4 oyster mushrooms sliced in strips
4. 10 broccoli florets blanched
5. 2 cloves garlic minced
6. 1 large onion minced
7. 1 can of organic tomatoes in juice
8. 1 TBS olive oil
9. 1 TBS Japanese mirin
10. 1 TBS canola cooking oil
11. Salt & pepper to taste
12. 1 bunch parsley chopped
13. Sprinkling of grated Parmesan cheese (optional)

Directions:

1. Cook pasta separately according to package instructions.
2. Heat pan with Canola cooking oil, fry garlic until golden.
3. Add onion and fry until golden.
4. Add meat and fry until brown.
5. Add oyster mushrooms and fry until golden.
6. Add 1 salt and 1 TBS mirin, reduce heat to prevent burn, stir well.
7. Add canned tomatoes, salt and pepper, stir well.
8. Add pasta and mix well.
9. Add broccoli and mix well.
10. Add 1 TBS olive oil and stir well.
11. Sprinkle parsley and stir well.
12. Dish and serve with grated Parmesan cheese :-)

Additional Information:
Our Little FECS and Mr. FECS are requesting for pasta, so I am making pasta dishes this week. I normally don't like any tomato-based or meat sauce pasta. I used to make them using store-bought ready to use pasta sauce, and it just didn't taste good. They tasted boring, but after making this Japanese inspired recipe, I am persuaded. It tasted really good and fresh. I think the reason is because real tomatoes are used. The canned tomatoes tasted more real than bottled pasta sauce. I am falling in love with tomato-based pasta now :-)

After our first full cooking class with our Little FECS during the fall school holidays, I am more confident of cooking more with him. Today is my day off from work (I work half-time). So I fetched our Little FECS home early from school, and we made dinner together :-) I must say, he had done most of the preparation and cooking himself. I am just at the side supervising :-)

After reading the recent report from WHO about eating bacon and other processed meat increases the risk of cancer significantly, I use the fresh pork breast, which are used to make bacon, for this dish.

Here is what you need. I forgot to show Parmesan cheese and onion.

You can buy pork belly from Netto for 69 DKK for 1.2 kg.

Peel garlic.





Chop garlic lengthwise.

Chop garlic breadth-wise.

Cut onion.

Slice oyster mushrooms in strips.


Cut pork breast in strips.

Now it's done :-)

Chop parsley.


Now it's done :-)

Heat canola cooking oil on pan.

Test that the pan is hot by dropping a garlic.

Add garlic.

Fry until golden.

Add onion and fry until golden.

Add meat.

Fry until brown.

Meanwhile, boil a pot with a lot of water to cook pasta. Add 1 pinch of salt into pot.

Add 1 TBS olive oil.

Add oyster mushrooms.

Add 1 tsp. of salt.

Add 1 TBS of Japanese mirin.

When water boils, add pasta and cook for 8 minutes.

Add canned tomatoes.

Add pepper.

Add a dash of tomato sauce and mix well.

When pasta is done after 8 minutes, drain and add to sauce.

Mix well.
 
Add 1 TBS olive oil and mix well.

Add parsley.

Mix well.

Blanch broccoli with hot boiling water. Drain immediately. Add to pasta.

Stir and mix well.

Dish out and serve with grated Parmesan cheese :-)

Easy & Healthy Natural Yogurt Breakfast

Sorry for the poor lighting, but it is autumn here in Denmark, and there isn't so much natural sunlight... hard to take good pictures.

Serves 1

Ingredients:

1. 5 thin slices of banana (1/3 banana)
2. 2 tsp of natural Greek yogurt 0% fat (or any other natural non-sweetened yogurt)
3. 1 tsp of sunflower seeds
4. 2 walnuts chopped
5. 3 blueberries
6. A sprinkling of honey muesli (1 pinch) (optional)

Directions:

1. Mix banana, sunflower seeds and walnuts together, mashing the banana.
2. Sprinkle honey muesli.
3. Add blueberries and serve :-)

Additional Information:

This is really healthy, tasty and packed with nutrients. I try to have this for breakfast everyday. Normally, for simplicity and time-saving, I only use the first 4 ingredients - namely banana, sunflower seeds, walnuts and yogurt. Trust me, it is already very tasty with just these 4 ingredients. The banana gives it enough sweetness already. If you want extra sweetness and crunch, the honey muesli is so handy. I bought my homemade honey muesli from my workplace canteen.

This breakfast is packed with nutrients - protein from yogurt, Vitamin B1 from banana. Walnuts and blueberries are said to be good for brain development. Walnuts contain omega 3.

Hope you will enjoy this breakfast. The blueberries double-up as decoration :-)

P.S. You may wonder, why all the ingredients come in such small quantity? Actually, when you mix all together, it fills half a small bowl and that is enough for my calories need - I am very small built.

This is the 0% fat Greek yogurt that I use. You can find them from the Danish supermarket IRMA.

Add 5 slices of banana into a bowl (I added 8 slices here)

Add a handful of sunflower seeds (about 1 tsp)

Add 2 chopped walnuts

Add 2 tsp of greek yogurt or any other natural non-sweetened yogurt

Mix them well, mashing the banana, and you can eat it as it is now :-)

If you wish for extra crunch, you can add a sprinkling of honey muesli, before eating.

I usually add 3 blueberries if I have them in the fridge

J Summary (6Y6M28D) - Bedtime Prayer

At bedtime this evening, I encouraged J to pray.

He said he didn't know how to pray. I said that prayer is just talking to God. He said he didn't know how to say it.

I asked him what he want to pray about.

He said he wanted that his daddy, Uncle P, farmor and mormor to know Christ. Very pleased that deep in his heart is the salvation of the Ngs and the Friis. So I said, just tell God that. After a long to-and-fro, he said he will try.

So he prayed: Dear God, Uncle P MUST become Christian NOW. I want my daddy to know you NOW. I want my farmor and mormor to accept Jesus into their hearts NOW. NOW GOD. In Jesus' name, Amen. (along with very demanding tone)

I was taken aback. When I told him that prayer is like talking to God, I meant to present prayer requests to God, not demands. His prayer was totally demanding. He was like commanding God to do things.

So I told him, this is not praying, this is demanding. He asked me how. So I prayed and showed him.
But now I regretted a little asking him to pray. I wondered if I had done the right thing to ask him to pray. Will God be offended by his demands?

So I asked him whether it was because didn't have the language, or is it because he just wanted to demand God. I want to know his heart.

I asked God to forgive him, but now I am still feeling rather distressed in my heart. I really hope God will not take offend, that God will forgive him and will give him another chance.

Chicken, Broccoli & Enoki Mushroom Pasta

Adapted from Just One Cook Book

Serves 3

Ingredients:
1. 600g organic wholegrain spaghetti
2. 2 cloves garlic chopped
3. 250 packet of king oyster mushrooms
4. 250g enoki mushrooms
5. 300g chicken sliced
6. 10 broccoli florets
7. 2 TBS Graham flour
8. 1 TBS cooking oil
9. 1 TBS olive oil
10. 1 TBS white wine or sake
11. 1 TBS mirin
12. 1 TBS Hontsuyu sauce
13. Salt & pepper
14. Tbsp. soy sauce
15. 1 stalk spring onion chopped
16. A handful Nori seaweed shredded.
17. 100ml 9% cream (9% kaffe fløde)

Directions:
1. Sprinkle chicken with salt and pepper.
2. Lightly coat chicken with graham flour, and leave it in the fridge until ready to cook.
3. Blanch broccoli with hot boiling water, drain and set aside water.
4. Cook spaghetti according to the package instruction, drain and set aside.
5. Heat cooking oil on pan and fry garlic until golden on medium high heat (no. 8 on my stove)
6. Add in the chicken and fry until cooked.
7. Add in the mushrooms and fry until they are coated with oil.
8. Add wine, stir and mix well.
9. Add mirin, stir and mix well, reduce heat (no. 6 on my stove) because mirin contains sugar and can burn easily.
10. Add in Hontsuyu sauce and soya sauce, stir and mix well.
11. Add in the pasta, stir and mix well.
12. Add in the broccoli, stir and mix well.
13. Add in olive oil, stir and mix well.
14. Add 1/2 bowl water from blanching broccoli, stir and mix well.
15. Reduce heat to low (no. 5.5 on my stove) and add cream (optional)
16. Dish out, garnish with spring onions and dried seaweed and serve.

Additional Information:
Our Little FECS requested pasta for dinner a while ago. So I made this today after his piano class. I wanted a pasta with chicken, broccoli and mushrooms, but was a little bored of always preparing it the same way. I found this Japanese-Italian recipe, and couldn't wait try it. Mr. FECS and our Little FECS love it. They asked for more pasta, but I only prepared one portion for each person.

I made it healthier using wholemeal graham flour instead of just flour. But you can use flour to coat the chicken, no problem.

I prefer this pasta without cream. So for my portion, I dished it out before adding the cream. It was still equally tasty.

References:

King oyster mushrooms and garlic prepared beforehand (forgot to take picture of enoki mushrooms, but you will see it below)

Sprinkle salt & pepper to marinade the chicken

Lightly coat the chicken with flour

Heat oil in pan, fry chicken. Once the chicken is cooked, add mushrooms and fry until coated with oil. Meanwhile, start cooking your pasta separately according to package instruments.

Add wine and mirin and mix well.

Add hon tsuyu sauce.

Add soya sauce

Add in the pasta and mix well

Add olive oil

Add broccoli, stir and mix well

At this point, if you want to make a healthier dish and do not wish to add the 9% cream, you can dish it out and garnish with spring onions and dried seaweed.

Reduce heat to 6 degree celsius, add 9% cream and mix well.

Dish out and serve with mushrooms and dried seaweed.

We woke up this morning, and found this in our room. J put his læsefidusen to bed in our room last night. It is such simple joy God provided us in having J around that made life so meaningful.

J Summary (6Y6M26D): Mommy, You Should Read the Bible Everyday

We were invited out for dinner, and got home late. J had to go to bed quickly after brushing teeth as he has school tomorrow.

Mommy: Quick go and sleep now.

J: You haven't read to me a Bible story yet. (Today is Sunday)

Mommy: There isn't time today.

J: If you are a Christian, and if you love Jesus, you should read the Bible everyday.

Mommy (thinking to herself): Aahh, you are learning well, but I know you are just making excuses not to go to bed :-) But now that he understood this concept, I should try to live up to the discipline of reading the Bible daily.
