Singaporean Curry Chicken

Recipe from my mum's friend Jenny
Serves 6-8

Preparation & Cooking Time:

Ingredients:

1. 1 whole chicken, chopped and with skin removed (1200-1500g)
2. 500g potatoes pre-boiled and cooked separately in a pot
3. 1 lemon grass pound
4. 1 bunch of garlic (8-9 cloves) minced
5. 1 onion chopped
6. 1 packet curry powder
7. 1 packet chili powder (or less depending on how spicy you want)
8. 2 packets coconut milk (or 1 can of coconut milk)
9. 2 TBS canola cooking oil
10. 8 dried chili (optional)
11. Salt to taste

Directions:

1. In a large pot, cook potatoes with water until done, and set aside.

2. On another large cooking pot, heat oil on high.

3. When the pot is hot, add in garlic and onions and fry until golden.

4. Add in curry paste, stir and mix well.

5. Add in chicken, stir and mix well.

6. Add in 1/4 portion of coconut milk, stir and mix well.

7. Add in potatoes, stir and mix well.

8. When the chicken is done, add in the remaining coconut milk, stir and mix well.

9. Turn off the fire to prevent the coconut milk from curdling.

10. Serve with bread or rice.

Additional Information:
Curry chicken is very easy to prepare. My mum's friend showed us how to cook curry chicken. According to her, the secret to the taste is in the garlic and onions. Our Little FECS really like cooking and he has been helping to make this dish :-)

Here are the main ingredients that you can get from the Danish Netto Supermarket (you can only get the lemon grass from the Danish Meny or Føtex Supermarket) Clockwise: garlic, onion, coconut milk, curry powder, chili powder, potatoes, organic chicken and lemon grass.

I bought the curry powder from Netto Supermarket for 5 DKK. The coconut milk is also from Netto Supermarket. Just add water to the curry powder until it becomes a paste. Be careful not to add too much water. It is about 1 part water to 3 parts curry powder I think.

Pound and cut into lemon grass into 2 inches. You can buy lemon grass from Meny Supermarket or Føtex Supermarket.

Cut the potatoes into quarters.

On a separate pot, bring to boil some water for boiling the potatoes.

When the water boils...

Add the potatoes.

Cover and cook until medium heat for 15 minutes.

Heat wok with 2 TBS cooking oil.

Add dried chili.

Add lemon grass and fry until fragrant.

Add garlic and fry until golden.

Add onions and fry until golden.

Add curry paste, stir and mix well.

Then add the chicken, stir and

mix well.

Add 1/4 portion of coconut milk.

Stir and mix well.

Add the pre-boiled potatoes...

Bring to boil until the chicken is cooked... (you will see that the oil came out)

Add in the rest of the coconut milk, stir and mix well.

The curry is ready to be served with french loaf or rice... and with a stir-fry vegetable dish on the side, if you like :-)
