Healthy Muffins with Apples & Oats

Makes 10 muffins

1. 3 dl grove rolled oats
2. 1 3/4 dl fresh skimmed milk
3. 1 egg
4. 2 apples cored and grated
5. 3/4 tsp baking powder
5. 1.5 vanilla powder
6. 1 TBS honey
7. Dash (0.1 tsk) of salt
8. 1/2 dl chopped almonds

1. Pre-heat oven to 190 degree celsius
2. Add milk and oats into a mixing bowl, mix and let it stand for 5-10 minutes to soften the oats.
3. Add egg and blend it with a stick blender.
4. Add grated apples, vanilla powder, baking powder, honey and salt into the mixture and mix well.
5. Add chopped almonds.
6. Transfer to muffin forms and bake for 25-30 minutes or until golden.

Keeps well in the fridge for 2-3 days, but you can also freeze them.

Our Little FECS found this recipe today and made these muffins for us this morning for breakfast. Baby FECS loved it.
