Quick Oven-Roasted Salmon

 Inspired from homemate.dk

Serves 3-4

Ingredients:
1. 4 slices of salmon
2. A handful of mushrooms
3. A handful of broccoli florets
4. A handful of split peas soaked overnight (optional)
5. A few stigs of rosemary (optional)
6. 1 carrot sliced
7. 1 apple sliced
8. 4 cloves of garlic unpeeled
9. 1 onion quartered or a handful of shallots
10. 1 TBS olive oil
11. A bit of cream (piskefløde)
12. Salt & pepper to taste
13. A handful of dild for garnish (optional)

Directions:
1. Drizzle olive oil, salt and pepper.
2. Roast in a pre-warmed oven for 15 mins at 220 degree celsius.
3. Garnish with dild and serve :-)

Quick Oven-Roasted Beef with Red Pepper Bells

Serves 3

Ingredients:
1. 3 pieces of beef of 150g each cut into pieces
2. A handful of oyster mushrooms sliced
3. 1/2 red pepper bell sliced
4. 1 onion quartered
5. 1 carrot sliced
6. 1 leek sliced
7. A handful of capers
8. 1-2 TBS olive oil 
9. Salt & pepper to taste
10. A handful of parsley for garnish (optional)

Directions:
1. Drizzle olive oil, salt and pepper.
2. Roast in a pre-warmed oven for 15 mins at 220 degree celsius.
3. Garnish with parsley and serve :-)

Additional Information:
Choose beef with more marble lines, and it will be more tender. I bought the beef from Netto supermarket, but IRMA has the best beef. Fortunately mine turned out tender after roasting :-)

If you wished the beef to taste more like "pan-fried," placed on them on top of the vegetables and drizzle a bit of olive oil on them.

Honey Soya Seasoning


Ingredients:
1. 2 slices of ginger minced
2. 2 cloves garlic minced
3. 2 TBS soya sauce
4. 1 TBS honey
5. Olive oil
6. Dash of salt & pepper

Directions:
1. Mix and stir all the ingredients together.

2. Toss with steamed vegetables (for example, steam 2 carrots sliced thin for 2 mins. then add 450g of broccoli florets and steam for another 5 mins.) or drizzle on vegetables for roasting in the oven.

Honey Soya Broccoli


Serves 4

Preparation & cook time: 30 mins

Ingredients:
1. 250g broccoli florets
2. 2 slices of ginger minced
3. 2 cloves garlic minced
4. 2 TBS soya sauce
5. 1 TBS honey
6. Olive oil
7. Salt & pepper to taste

Directions:
1. Mix garlic, ginger, soya sauce (2 TBS), honey (1 TBS) and pepper to make the sauce and pour on top of the broccoli.
2. Sprinkle olive oil.
4. Sprinkle salt.
5. Bake in a pre-heated oven for 10 minutes at 200 degree celsius.

Additional Information:
Tried this today and Our Little FECS loved it (8Y1M), especially the broccoli with the honey soya sauce. Will make the broccoli separately as a dish next time.

Wash, cut and place broccoli on an oven-proof dish

 The seasoning is done :-)

 Add the honey soya seasoning

 Drizzle some olive oil

 Sprinkle some salt
 Ready to place in oven :-)

 Bake for 10 mins

Quick Oven-Baked Honey Soya Salmon



Serves 4

Preparation & cook time: 30 mins

Ingredients:
1. 4 pieces of salmon
2. 250g broccoli florets
3. 2 slices of ginger minced
4. 2 cloves garlic minced
5. 2 TBS soya sauce
6. 1 TBS honey
7. Olive oil
8. Salt & pepper to taste

Quick Oven-Baked Salmon with Japanese Panko & Parmesan Cheese


Serves 4

Preparation & Cook Time: 45 minutes

Ingredients:
1. 4 pieces of salmon
2. A handful of asparagus
3. 1 egg beaten
4. 1/2 cup panko (or the Danish rasp)
5. 1/2 cup parmesan cheese
6. 1 tbs chopped parsley
7. Olive oil
8. Salt & pepper to taste

Directions:
1. Mix panko, parmesan cheese, salt and parsley in a bowl.
2. Dip salmon into egg and than coat with panko mixture.
3. Place asparagus on the side.
4. Drizzle olive oil, sprinkle with salt and pepper.
5. Bake in pre-heated oven for 10 mins at 200 degree celsius.

A Fun Way to Teach Area - Measuring Playpen


Age: From 7 years old (After your child has tried out the Montessori Short Bead Chains

Objective: To provide a hands-on and fun way of learning area

Materials:
1. Measuring tape
2. Paper and pencil

Directions:
1. Draw the playpen on a piece of paper
2. Tell your child that each cm represent a Montessori golden bead and ask him how many beads will make up the surface of the playpen.
3. Ask your child to measure the length of the playpen and write it down on the paper.
4. Ask your child to measure the breadth of the playpen and write it down on the paper.
5. Ask him to multiply length by breadth of the playpen to get the number of beads that will fill the table.
6. Tell him that this is called "area" in Maths.

Additional Information:
In continuation of the success of two days ago, we continue with simple area. J (7Y11M13D) was very thrilled and said this is one of the best and most fun Montessori Maths activity (it is actually not Montessori). I was very glad to be able to capture his passion and excitement with this activity and meeting him where he is. It is very simple area, and very simple Maths, but it inspired him to develop a love for Maths.

Additional Information:
I noticed that J really enjoys using the measuring tape to measure things, so I thought of asking him to measure things in order to find out their area. I tried this with him today (7Y11M11D). He enjoyed this exercise very much, and he already thought of what things to measure for tomorrow's exercise - the playpen :-)

16/2/17: Happy 9 months old, Chastine. Yet another month has passed... soon you will be a pre-toddler... and we will be looking back at your babyhood with nostalgia, well already started...Thank you for the beautiful memories you have brought to mommy's and daddy's lives. Easy Meatballs


Serves 3-4 people

Preparation and Cooking Time: 45 minutes

Ingredients:
1. 500g minced pork
2. 2 tablespoons olive oil
3. Salt to taste
4. 1 onion diced small (optional)
5. 1 garlic pressed (optional)
6. 1 medium carrot diced small (optional)

Directions:
1. Mix all the ingredients above in a bowl.

2. Form into balls with hands.

3. Heat cooking oil on a pan and fry on medium fire (no. 5 on our stove) for 5 minutes on each side

or bake in oven at 180 degree celsius for 30 mins or until golden and cooked.

4. Serve with salad :-)

Additional information:
Baby FECS is very fussy, and doesn't like fish :-) Chicken seems too tough for her. So I am trying to feed her meatballs. I usually take a portion out, before adding salt for rest of the family.

If you want it to be even more nutritious, you can add 2 tablespoons of wheat germ, before mixing the ingredients. You an also add 2 tablespoons of ground oats, if you wish, instead of the wheat germ.

C Summary (7M29D): A Special Kiss for Mommy

I was upset and sad over something today. This evening, while putting C to bed, she kissed me on the cheek (by planting her lips on my cheek for a few seconds, not exactly a real kiss, but as much a kiss as a baby could), as though she was saying, "Mommy, I know you are sad. I just want to comfort you. I love you so much." They were special kisses reserved just meant for me, as she kissed J only after much coaxing and refused to kiss Daddy, no matter how I coaxed her.

Luggage Double-Up As Make-Shift Baby Cot



As first time parents with our first baby, we thought we needed all those baby equipment. All those baby equipment cost a fortune, take up space and actually add stress to our lives. We traveled and packed travel cot with our first baby. We realized that many of the baby equipment is not needed, and they actually add stress to our life.

With our second baby, we managed to travel lighter, doing away with the travel cot. We use the luggage to double-up as the make-shift travel cot instead. We used the adult size pillow from the hotel  room as "mattress" in the suitcase for Baby FECS. We succeeded to make Baby FECS (7M25D)  falling asleep in the luggage "baby cot" today during our first evening in Sydney :-)

C Summary (7m20d): Said "Da Da" & Kissed Mommy For the First Time


5 December 2016 (7m20d): On the flight to Sydney today, I noticed Baby FECS said "da da" as like daddy clearly for the first time today. I kissed her, and put her to my face to kiss me back. She planted her lips on my face and gave me some kind of a kiss, at least that was what I felt she was trying to do. Then she smiled. This went on for several time.
