How to Soften Wheat Kernels for Salads and Bread-making?

Wheat kernels are so tasty and nutritious. How do you prepare them?

Ingredients:

1. 200ml wheat kernels (approx. 150g)
2. 400ml water
3. 1 tsp salt (optional)

Directions:

1. Rinse the wheat kernels in a sieve.

2. Add 200ml of wheat kernels and 400ml of water in a pot.

3. Bring to boil on high heat.

4. Once boiling, simmer for 30 minutes under low heat.

5. Add one teaspoon salt to taste.

6. Off the fire, cover and let it rest and absorb the water for 30 minutes. It's done :-)

7. Drain off any remaining liquid, but don't throw the liquid away as it is packed with nutrients. You can use it for soup or for thickening sauce. It adds nutrients to your sauces. You are ready to use them in salad or in your bread-baking :-)

Use the same method to soften rye kernels :-)

Ever wonder by Europeans are in general taller and stronger built than Chinese? I think it's because they have been eating bread made of wheat for generations. Similarly, northern Chinese in general are taller than southern Chinese. It could be that northern Chinese eat more wheat and southern Chinese eat more rice. Wheat is a more nutritious grain than rice. So I try to incorporate more whole wheat into our diet :-)

Add 400ml of water and  slowly bring it to boil on high heat.

Once boiling, lower heat and simmer for 30 minutes.

After simmering for 30 minutes, you can add 1 teaspoon salt to taste (optional, I usually don't add a teaspoon, but just a tiny tiny bit, or not at all, as it is tasty on its own)

Off the fire, cover and let the wheat kernels to cool down and absorb the water for another 30 minutes.

Now it is done :-)
Drain off any remaining liquid, but don't throw the liquid away.

 The liquid it is packed with nutrients.

You can use it for soup or for thickening the sauce or to adjust sauces consistency. It adds nutrients to your sauces. If nothing else, feed it to your potted plants as nutrients :-)

You are ready to use the kernels in salad or in your bread-baking :-)
