C Summary (3Y11m8D): Her First Written Chinese Character



C came to me and asked me with pride beaming on her face what she had written. She had also cut it out herself with a pair of scissors, all the while, while I was busy in the kitchen. I said it is the Chinese character representing a human. She said yes. She then asked me to laminate it, the way I laminated big brother's art.

This is the first time she wrote a letter all by herself. So I agreed with her that we will laminate it for memory.

Banana Walnut Bread Made with White Wholewheat Flour


Ingredients:

1. 2 Tbsp (14g) ground flax seeds
2. 6 TBS (90 ml) water
3. 3 medium ripe bananas
4. 1/4 cup (60 ml) olive oil
5. 5 (50 g) dried dates pitted or 45 g sugar
6. 1/2 tsp (2.5 g) baking soda
7. 1/2 tsp (2.5 g) baking powder
8. 1 tsp (5 g) vanilla powder/sugar
9. 1 tsp (5 g) ground cinnamon
10. 1.5 cup (150 g) white whole wheat flour
11. 1/4 cup chopped walnuts
12. 1/4 cup (25 g) chocolate chips (optional)

Directions:

1. In a large mixing bowl, add ground flax seeds and water and mix well. Leave for 5 minutes until it gels.

2. Preheat the oven to 320F/160C and lightly grease a loaf pan.

3. Once the flax seeds have gelled, add the bananas and mash well.

4. If using dried dates instead of sugar, blend dried dates, flax seeds mixture and olive oil now and transfer to the mixing bowl (optional).

5. Otherwise, add olive oil, sugar, vanilla powder and cinnamon powder and mix well.

6. Add the baking soda, baking powder gradually and mix well.

7. Slowly add in the flour and gently mix until partly combined. Then add the chocolate and mix until just combined (do not over mix). Keep some chocolate if desired to sprinkle on top.

8. Transfer into the greased loaf pan and sprinkle cinnamon powder and chocolate chips on top.

9. Bake for 50-60 minutes or until the top is golden, the bread starts to pull away from the sides, and a toothpick comes out clean.

10. Let cool, slice and serve :-)

Storage: 

Store leftovers in an airtight container for up to two days. Wrap individually and store in the freezer for up to one month.

Additional Information:

I had some over-ripe bananas that I have to use it, so I thought of making it into banana walnut bread today :-) I found this very nice recipe from Pick Up Limes, and it tasted super. I tweeted the recipe though by using wholewheat flour, olive oil and half the sugar. It turned out still perfect. In fact, Daddy FECS said that I can reduce the sugar a bit further. The recipe above has been adjusted accordingly. I didn't add any egg.

If you don't have dried dates, you can substitute with 45 g of sugar. 

You can substitute the baking powder and the baking soda with 10g of fresh yeast, if you let the dough rise overnight in the fridge for 6-24 hours.

 My overripe bananas

White wholewheat flour

In a large mixing bowl, add ground flax seeds and water and mix well. Leave for 5 minutes until it gels.

Mix 2 tablespoons of ground flaxseeds with 6 tablespoons of water. Let it gel. Then mash in 3 medium bananas.

 Add 1/4 cup of olive oil, 45 g sugar, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1 teaspoon vanilla powder, 1 teaspoon cinnamon powder, 150 g white wholewheat flour and mix together. Add 1/4 cup chopped walnuts and 20 g chocolate chips.

 Transfer to bread loaf pan.

 Sprinkle some cinnamon powder and chocolate chips on top.

 Bake at 160 degree celsius for 40 minutes or until the top is golden, the bread starts to pull away from the sides, and a toothpick comes out clean. 

Now it's done :-)

 Let cool.

Transfer to a cooling rack and let it cool further.




 Slice and serve :-)



 C loved it so much, she asked me to make it again tomorrow.

Sunday 20 April 2020 caught some frog eggs. Took it home to our frog aquarium all set up a week ago for this moment. So exciting!!!



 The cell started to multiply...

Coffee Ice-cream

Makes 4 - 5 portions


Ingredients:

1. 1 TBS Nescafe coffee powder
2. 1/2 ripe avocado
3. 6 dried dates pitted
4. 1 cup (250 ml) skimmed fresh milk
5. 1 TBS hazelnut butter (optional)

Directions:

1. Blend using a blender (I use Magimix blender under smoothie setting).
2. Transfer into ice-cream mold and freeze.

Additional Information:

Still on the subject of making ice-cream... I sometimes sneak in 1 teaspoon of rolled oats and three leaves of baby spinach when blending, and I won't taste the difference.

 Add 6 dried dates pitted into the blender

 1 tablespoon of Nescafe coffee powder

 1/2 ripe avocado

 1 cup (250 ml) fresh skimmed milk

I use the smoothie program to blend - 1 cycle.


 Add some nuts and chocolate chips as a topping if desired

 Add in the coffee blend

 Top with nuts and chocolate chips (optional)
