Healthy Danish Meatballs with Oatmeal/Sunde Frikadeller med Havregryn
Serves 4
Preparation and Cooking Time: 30 minutes
Ingredients:
1. 500g minced pork (3-7% fat)
2. 1/2 cup or 100ml oatmeal
3. 2 eggs beaten
4. 200ml fresh skimmed milk
5. 2 onion finely chopped
6. 1 clove garlic squeezed
7. 50g sun dried tomatoes chopped (optional)
8. Handful of basil leaves chopped (optional)
9. 1 tsp brewer's yeast (optional)
10. 1 tsp wheatgerm (optional)
11. 1 tsp salt
12. Sprinkle pepper
13. 2 TBS cooking oil
Directions:
1. Mix all ingredients together (except oil) and make into balls using a tablespoon.
2. Heat cooking oil on a pan and fry on medium fire (no. 5 on our stove) for 5 minutes on each side.
3. Serve with chopped red pepper bells.
Additional Information:
Daddy FECS and I made this for dinner today with our Little FECS. Our Little FECS liked it a lot.
