Homemade Strawberry Ice-cream Without Using Any Machine


Serves 8

Preparation Time: 45 minutes (excluding freezing)

Ingredients:

1. 200g strawberries blended
2. 300ml whipped cream (piskefløde)
3. 2 egg yolks
4. 3 TBS sugar
5. 1 tsp vanilla sugar
6. 2 TBS honey
7. 1 TBS lemon juice (approx. half a lemon)
8. 100g chopped almonds (optional)
9. 100g chocolate chips (optional)

Directions:

1. Blend strawberries with a blender.

In a mixing bowl, add egg yolk, sugar and vanilla sugar and beat until airy and combined with a hand mixer.

2. In another bigger mixing bowl, add whipped cream and beat until a yogurt-like consistency is reached with a hand mixer.

3. Add the egg yolk mixture into the whipped cream, folding and combining them gently with a spatula.

4. Gently stir in the strawberries, chocoloate chipes and the chopped almonds.

5. Transfer into a container and freeze for 5 hours. Enjoy :-)

Additional Information:

Summer time is the time where Danish kids eat a lot of ice-cream. In continuation of making ice-cream, today, I am making another of my favorite - strawberry ice-cream. This is a very easy recipe and you don't need any ice-cream machine, but the ice-cream comes out just like ice-cream :-)

I like like to add chocolate chips and chopped nuts into my strawberry ice-cream, but it is of course not a necessity.

Blend 200g stawberries

Add 1 tablespoon lemon juice (approx. half a lemon)

Add 2 tablespoon honey and mix well. Set aside.

 Add 2 egg yolks

Add 1 teaspoon vanilla sugar

Add 3 tablespoons of sugar

   Beat egg yolk mixture

 300ml cream (piskefløde)

 Whip cream until yogurt-like consistency is achieved (Don't over-beat)

 Combine egg yolk mixture with whipped cream and gently fold them with a spatula

Add blended strawberries.

 Gently stir and...

Mix well.

Add chocolate chips and chopped almonds... (optional)

Gently stir and...

Mix well.

Transfer to a container

Cover and freeze overnight. Then it is ready to serve :-)
