Swiss Rosti Potato



Serves 3 - 4

Cooking and Preparation Time: 30 - 40 minutes

Ingredients:
1. 8 medium potatoes de-skinned and grated
2. 1 large onion sliced long and thin
3. 2 TBS cooking oil or butter for frying
4. Salt and pepper to taste

Directions:
1. Remove the skin of the potatoes and grate them.
2. In a mixing bowl, add grated potatoes and onion, salt and pepper and mix well.
3. Drain the potatoes off the liquid.
4. Heat oil on pan to the highest heat, add the grated potatoes and press down.
5. When the bottom side of the grated potatoes became brown, turn it around to brown the other side.
6. When both sides of the potatoes are brown and cooked, off fire and dish them out to serve (it took about 10 mins in all)

Additional Information:
Daddy FECS loves the rosti potatoes. We just came back from the Swiss Alps and got inspired to make our own. We tried it this evening for dinner. Daddy FECS helped to grate the potatoes. It was very successful and we have created the rosti potatoes just the way it looked and tasted, while we were in Switzerland. Adding onion helped to give it the crispy brown effect. It was Florian's idea to add onion. It was actually very easy to make. We did not pre-boil the potatoes. Thus, this is a very simple no fuss recipe and it tasted good. We read about the recipe from the cook book we browsed through, while we were in Switzerland. We will certainly make it again :-)
