Healthy Chicken Salad


Makes spread sufficient for 3 sandwiches

Ingredients:

1. 1/2 cup bite-size cooked chicken
2. 1/4 cup skyr yogurt or greek yogurt (I use the low 0.2% fat version)
3. 1/4 diced red onion
4. Sprinkling of chopped chives or basil (optional)
5. 1/2 tsp of homemade garlic oil (optional, for the fragrant)
6. Juice from 1-2 lemon wedges
7. Sprinkling of salt and pepper to taste

Directions:

1. All all the ingredients in a bowl and mix well.

2. It's now ready to be eaten on its own or use to make sandwiches :-)

Additional Information:

After the success with the egg salad, I made this for the kids' lunch box tonight for the following day. Daddy FECS tried it again and he liked it.

For the sandwiches, I layer some spinach leaves, slice cucumber and sliced tomatoes, topped it up with the chicken salad and add three basil leaves on top as garnish.
