Japanese Teriyaki Salmon

Adapted from Just One Cook Book

Ingredients:

1. 4 salmon steaks
2. 2 TBS flour 
3. 1 TBS cooking oil
4. 1 TBS butter
5. 1 TBS sake (or dry sherry)
6. Dash of salt and pepper

Seasonings:

1. 1 TBS soya sauce
2. 1 TBS sake (or dry sherry)
3. 1 TBS mirin
4. 1 TBS minced ginger (2 slices)
5. 1 tsp sugar

Directions:

1. Mix the ingredients for seasonings and stir the sugar is dissolved.

2. Sprinkle salmon with salt and black pepper on both sides.

3. Lightly coat salmon on both sides with flour. Remove excess flour and set aside.

4. Heat pan with cooking oil, add the salmon with skin side on the bottom. Fry for 3 minutes or until the bottom side is golden.

5. Turn over and fry until golden.

6. Add sake, cover with lid and steam the salmon for 3 minutes or until cooked.

7. Pour in seasonings over the salmon and let the sauce start to boil.

8. When the sauce thickens, spoon it over the salmon and turn off the heat.

9. Serve with rice and broccoli or salat :-)

Additional Information:

We tried this for the first time on 26 October 2015. Both Daddy FECS and our Little FECS love it.

Heat pan with cooking oil, one salmon at a time, press the skin against the hot frying pan‘s surface for 15 seconds before laying it skin side. Fry for 3 minutes or until the bottom side is golden. Turn over.

Add sake, cover with lid and steam the salmon for 3 minutes or until cooked.

Pour in seasonings over the salmon and let the sauce start to boil. When the sauce thickens, spoon it over the salmon and turn off the heat.

Serve with rice and broccoli or salat :-)
