Creamy Danish Green Peas Sauce/Ærtepure Sauce


Recipe adapted from Søndagsavisen

Serves 4

Preparation Time & Cook Time: 45 minutes

Ingredients:
- 400-500g frozen green peas
- 2 TBS Olive oil
- Juice of 1/2 lemon
- Sea salt & pepper
- 200ml water

Directions:
1. Boil water in a pot without cover and cook the peas for 2.5 - 5 minutes (depending on the level of frozenness of the peas), pour the liquid off, but save it.

2. Blend the peas with 2 TBS oil and a little of the broth, juice of half a lemon and season with salt and pepper.

3. Serve as sauce or dipping for cod fish or beef steaks, for example.

Additional Information:
Sometimes, it can be very boring to eat peas just on its own, and this peas sauce provides a new way to eat peas. This is a very tasty sauce - its creaminess from olive oil and its sweetness from the green peas itself, but it is very healthy too. Blending the peas brings out further the sweetness of the peas. It is very suited to older babies or young toddlers too, for if you analyze it closer, it is actually no difference from baby food, but with the addition of olive oil, salt and pepper. Florian likes this sauce very much. This is a sauce that will be suited for the whole family. Try it :-)

Note: The original Danish recipe asked for putting stock into the green peas, but I really don't think that it is necessary, as the peas itself is very very sweet and tasty already.
