Mexican Guacamole Dip
Serves 4
Preparation Time: 15 minutes
Ingredients:
1. 2 ripe avocados
2. 4 cherry tomatoes deseeded, diced small
3. 1 red onion or shallot diced small
4. 1 TBS cilantro chopped
5. 1 lime juiced or 1 TBS lemon juice
6. 1/4 tsp salt & pepper
7. 3-4 stalks chives chopped (optional)
8. 1 garlic cloves squeezed (optional)
9. 1/2 tsp cayenne powder or to taste (optional)
10. 1 TBS cottage cheese (optional)
Directions:
1. In a bowl, mash the flesh ripe avocados with fork.
2. Add tomato, onion, garlic, chives, cilantro, lemon/lime juice salt and pepper and mix well.
3. Serve immediately with tortilla chips (cheese flavoured)
Additional Information:
It tastes great with a little cottage cheese added to the guacamole dip with tortilla top with melted cheese. For a healthier choice, you can also skip the cottage cheese and serve it with organic crispy bread instead. My Superstar loves guacamole dip. So I am learning to make it.
