Quick & Healthy Pasta

Serves 2

Preparation & Cooking Time: 30 minutes

Ingredients:
- 100g dried wholegrain pasta
- 1 TBS cooking oil
- 2 cloves garlic chopped
- 1/2 leek white portion chopped
- 250g minced beef or pork
- Salt & pepper to taste
- 1 TBS soy sauce (optional)

Tips:
1. If you have the time, include vegetables by blanching some broccoli florets on the side.

2. You can sprinkle some unsalted cashewnuts as garnish.

Directions:
1. Pre-cooked pasta separately and blanch broccoli and set aside.

2. Fry garlic and leek in a skillet until fragrant.

3. Add minced pork, salt and pepper and fry until done.

4. Add the cooked pasta and broccoli and mix well.

5. Dish up, sprinkle cashewnuts and serve.

Additional Information:
This is an Asian inspired pasta dish, which I got inspired from my Thai colleague, Fon. The cooking method used is similar to Asian fried noodles. I use rye wholegrain pasta here. It is a new Danish product which I bought from Superbest. We had this for dinner tonight. It was the first time that I allowed J to watch a DVD. He watched the Leap Frog Letter Factory which lasted 30 minutes and I had 30 minutes to get dinner ready.
