Danish Oven-Roasted Duck Breasts/Andesteg/丹麦烤鸭[Dān mài kǎo yā]

From my mother-in-law's recipe

Serves 4

Preparation & Cooking Time: 45 minutes

Ingredients:
- 2 - 3 duck breasts
- 1 apple sliced
- 5 dried prunes (optional)

Directions:
1. Fry in a pan with the duck skin facing down for 15 minutes to remove the fat from the duck.

2. Preheat oven to 180°C.

3. Sprinkle salt and pepper on an oven-proof dish.

4. Then spread the apples and dried prunes on the oven-proof dish.

5. Transfer the duck breasts to the oven-proof dish with skin facing up and discharge the oil collected in the pan.

6. Sprinkle salt and pepper on the duck.

7. Bake for 15 minutes or until tender, but cooked (the meat should look rosy, when you slice it).

8. Slice into pieces and serve.
