Singaporean Malay Curry Chicken/Singaporeansk Malay Kylling i Karry/新加坡马来咖哩鸡 [Xīn jiā pō mǎ lái gā lǐ jī]


From my mum's recipe...

Serves 6

Preparation & Cooking Time: 45 minutes

Ingredients:

1. Chicken (6 pieces of drumsticks and thighs)
2. Lemongrass (2-3 stalks)
3. Scallop onions (4-5)
4. Garlic (2 - 3 cloves)
5. Ginger (4-5 slices)
6. Potatoes (4-5)
7. Tomatoes (2)
8. Carrot (2)
9. Curry powder (3 full tablespoon)
10. Coconut milk (1 can) or yoghurt (1 cup) or fresh milk (1 litre)
11. Lemon or lime (1)
12. Salt (1 teaspoon)
13. Cooking oil (2 tablespoon)
14. Water (1-2 TBS)

Directions:

1. Cut 6 potatoes into 4 pieces each.

2. Mix curry powder with water into a paste.

3. In a wok or heavy bottom pot, fry lemongrass and chopped onion until golden brown, add chopped ginger and chopped garlic and fry.

4. Add curry powder paste and fry until fragrance.

5. Add the coconut milk/yoghurt/milk.

6. Add cut potatoes and wait until it is cooked.

7. Add cut carrots

8. Add chicken until cooked

9. Add salt.

10. Add chopped tomatoes.

11. Squeeze in lemon

12. Simmer and serve.
