Quinoa Salad



Serves 3

Preparation & Cook Time: 30 minutes

Ingredients:

1. 1/2 cup red and black quinoa
2. 1 pack of a slice of warm-smoked salmon (varmrøget laks)
3. A handful of sunflower seeds
4. 1 stalk of spring onion chopped
5.  A handful of frozen french beans
6. 1 red/yellow pepper bell cut
7. A handful of baby spinach (optional)
8. 1 avocado chopped (optional)
9. 1/2 red onion sliced into strips (optional)
10. 1 large or 3 cherry tomatoes cut (optional)
11. 1 quarter cucumber chopped (optional)
12. 1 cup edamame (soy beans) (optional)

Dressing:

1. 2 TBS olive oil
2. 1 tsp lemon juice
3. 1 tsp soy sauce
4. Salt & pepper to taste

or

French dressing
1. Mix white wine vinegar with salt & pepper in jar. Put lid on & shake until salt has dissolved.
2. Add dijon mustard & shake again.
3. Add oil & garlic & shake well.

and chilli oil

Directions:

1. Cook quinoa by boiling 2 parts water with 1 part quinoa, bring to boil and simmer under low heat for 15 minutes until cooked - it should be crunchy, but not soft. Drain and set aside

2. Mix dressing in a small jar tightened with lid and shake well.

3. Tear apart smoked salmon into small chunks.

4. Toss all the ingredients together with the dressing and mix well.

Additional Information:

5 April 2016: We love the We Do Food Omega Quinoa salad, because it tastes good and super duper nutritious. It contains all the super food - quinoa, salmon, spinach and french beans. Today, we decided to try to make it ourselves. Glad that it tasted great and is quite easy to make. Both Daddy FECS and our Little FECS love it too :-)
