The Powerful Potato/Kartoffel/马铃薯[mǎ líng shǔ]/土豆[tǔ dòu]


I prefer to serve this from 6 months, although some books says it can be served from 4 months.

If there is one single root vegetable I would choose to introduce to J, it would be the potato as it is nutritious and easily available in Denmark (compared to sweet potato).

Directions:
1. Wash, peel and chop 600g of potatoes into pieces

2. Steam potatoes for 15 minutes or until tender

3. Add 6 teaspoons of powder milk and 6 teaspoons of olive oil (optional but recommended)

4. Puree with fork or with blender (will become starchy, if blender is used. But J doesn't mind it :-)

Storage:
1. Cool down, pour into ice cube tray and freeze.

2. Once frozen, knock the cubes out and store them in freezer bags (makes 2-3 ice cube trays, can store up to 8 weeks)

Nutritional Value:
Potatoes are a good source of complex carbohydrates, vitamin C, vitamin B6 (which supports the formation of almost all the new cells in your baby's body) and potassium. They also contain fibre, iron, folates, riboflavin, thiamin, niacin, zinc and magnesium.

The carbohydrates in potatoes contain something called 'resistant starch' - so named because it resists being digested on its way to the large intestine! Once there, it acts like fibre, in that it lowers cholesterol and helps guard against colon cancer.
