Healthy Avocado & Banana "Jam"

Just spread the avocado & banana "jam" onto the bread, instead of using butter :-)

Directions:
1. Mash 1 ripe avocado and 1 banana with fork and serve.

This must be eaten feshly made or the avocado and banana will turn brown.

Sometimes, it is a challenge to store avocado as it takes a long time to get ripe, but when it is ripe, it turns quickly to spoil. But I have found a perfect solution to it. When an avocado is fully ripe, put it in the fridge and it will remain fresh for 5 days before turning over ripe.

However, never place an unripe avocado in the fridge, as then it will never become ripe.

This is actually J's first baby food... but all that I learned for baby food is not wasted, as many of them can be used for adult food. In this case, mashed avocado and banana for babies become Avocado & Banana Jam for adults.

If you are running short of time, you can also just slice the banana and put as topping on the bread, instead of mashing them. But mashing them taste much better, as they are evenly mixed together.

1.5.10 - Home baked walnut raisin carrot bread with homemade avocado and banana "jam" and fresh milk

The skimmed milk in grey is for J and me and the low-fat milk in blue is for my Significant Other.
