Root Vegetables/Rødfrugter/欧洲防风根 [ōu zhōu fáng fēng gēn]

Serves 4

Preparation Time: 15 minutes

Cooking Time: 15 minutes

- 1 parsnip
- 1 carrot
- 1 green capsicum
- 1 onion
- 3 TBS olive oil
- 1 lime squeezed
- 1 clove garlic, chopped
- 1 tsp of fresh rosemary
- 1 pinch sea salt

1. Slice the vegetables into thin slices and tossed with olive oil, garlic, lime, rosemary and salt

2. Bake in oven for 15 minutes at 195 degree celsius.

Additional Information:
You can make this yourself, but I actually bought this ready sliced and marinated at Føtex Supermarket, and it was surprisingly cheap - 19.95 kr. and it even came in an oven ready aluminium dish. I served it for lunch on Saturday to my in-law and my mother-in-law really liked it (she took second helping, which she normally doesn't do with all the food she eats :-)

It is really an easy, fast, affordable, nutritious, convenience way for busy families with kids and makes it easy to see guests too, if you dare to serve the guests such simple "fast" food :-) Shhh.... just don't tell the guests that it came all ready marinated from the supermarket, and it actually look really quite home-made :-)
